¼ onion, finely chopped
1 cup shredded Cheddar cheese
½ cup sour cream
1 tablespoon dried parsley
1 tablespoon taco seasoning
1 teaspoon dried oregano
½ teaspoon ground black pepper
2 ½ cups enchilada sauce
1 ½ teaspoons chili powder
1 clove garlic, minced
½ teaspoon salt
8 flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can sliced black olives, drained
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

4 veggie burgers or 4 turkey burgers
4 hamburger buns or 4 kaiser rolls
4 slices monterey jack pepper cheese
jarred sliced pickled jalapeno pepper
onion, sliced thin
4 slices tomatoes
enchilada sauce, heated (I prefer homemade!)

Steps:

  • Fry patties until desired doneness. Top each with a slice of pepper jack and cover until melted. Simultaneously toast/grill the buns.
