CHIPOTLE CHILI RECIPE

This chunky chipotle chili recipe is made with a mix of peppers, chili seasoning, and lots of chipotles in adobo sauce for the best rich and smoky flavor.

Categories     Main Course

Number Of Ingredients 14

1 tablespoon olive oil
1.5 pound ground turkey or ground beef (I'm using a combination of both)
1 large onion chopped
1 jalapeno pepper (chopped)
1 poblano pepper (chopped)
1 hot chili pepper (chopped (for a spicier version - try a habanero or ghost pepper - optional for a nice and extra spicy chili))
4 cloves garlic chopped
2 cans red kidney beans
3 cans fire roasted tomatoes (42 ounces, or use equivalent fresh)
2 tablespoons chili powder
1 7- ounce can chipotles in adobo sauce (use half the can for a milder chipotle flavor)
1 teaspoon freshly ground cumin
1 teaspoon red chili flakes
Salt and pepper to taste

Steps:

  • Heat the oil in a large pot to medium-high heat and add the ground turkey (or beef), onion and peppers. Cook them down about 10 minutes, or until the meat is cooked through and the vegetables are softened.
  • Add the garlic and cook another minute, stirring.
  • If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step.
  • Add the remaining ingredients and give it all a good stir.
  • Reduce the heat and cook the chili on low heat for at least 1 hour to let the flavors develop, stirring every now and then. Adjust for seasonings if you wish. Alternatively, you can transfer everything to a slow cooker or crock pot at this stage and cook on high for 1-2 hours, or on low for 3-4 hours, until the flavors develop to your preference.
  • Serve in bowls with your favorite fixin's.

Time 2h35m

Yield 6 to 8 servings

Number Of Ingredients 20

2 tablespoons vegetable oil
2 cups chopped onions
Salt
Cayenne
2 pounds stew meat, cut into cubes
1 tablespoon chili powder
2 teaspoons ground cumin
Crushed red pepper
2 teaspoons dried oregano
2 tablespoons chopped garlic
3 cups crushed tomatoes
1/4 cup tomato paste
8 cups beef stock
2 tablespoons masa flour
4 tablespoons water
1 cup canned dark red kidney beans
1 bag tortilla chips
1 1/2 cups grated Monterey Jack cheese
6 tablespoons sour cream
1 small jar jalapenos

Steps:

  • In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, and beef stock. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, partially covered for 1 1/2 hours, stirring occasionally, or until the beef is tender. Skim off the fat occasionally.
  • Mix the masa and water together. Slowly stir in the masa slurry, add the beans, and continue to cook for 30 minutes. Reseason with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips. Garnish with the grated cheese, sour cream and jalapenos.

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to reduce cooking time and makes them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Use a variety of beans: Emily's Chipotle Chili recipe calls for three types of beans: black beans, kidney beans, and pinto beans. However, you can use any type of bean that you like. Some other good options include Great Northern beans, navy beans, and white beans.
  • Don't be afraid to add heat: Chipotle peppers are a key ingredient in this chili, and they add a nice smoky heat. If you like your chili spicy, you can add more chipotle peppers or use a hotter variety of chili pepper.
  • Let the chili simmer: Simmering the chili for a long period of time allows the flavors to develop and deepen. The longer you simmer the chili, the better it will taste.
  • Serve with your favorite toppings: Emily's Chipotle Chili is delicious on its own, but it's even better when served with your favorite toppings. Some good options include shredded cheese, sour cream, guacamole, and salsa.

Conclusion:

Emily's Chipotle Chili is a delicious and easy-to-make recipe that is perfect for a cold winter day. The combination of beans, vegetables, and spices creates a hearty and flavorful chili that is sure to please everyone at your table. So next time you're looking for a comforting and satisfying meal, give Emily's Chipotle Chili a try.
