EMERIL'S KICKED-UP TUNA MELT
Looking for an interesting tuna melt, I wandered into the Food Network where I found this little gem of Emeril's which I slightly adapted to suit my 'buds. Even my tuna-averse husband loved them! I omit the tomatoes for personal preference, but have left them in the recipe. Please note that while I'm leaving the recipe yield and ingredient quantities the same as the original, I actually got twice as many open-faced sandwiches!

Tips:
- Use high-quality tuna: Opt for solid albacore tuna packed in water or olive oil for a premium taste and texture.
- Mayo matters: Use a good-quality mayonnaise, as it contributes significantly to the overall flavor of the sandwich.
- Spice it up: Don't be afraid to adjust the amount of cayenne pepper and Sriracha sauce to your desired level of spiciness.
- Bread choice: Choose a sturdy bread that can hold up to the fillings, such as a hearty sourdough or a toasted baguette.
- Experiment with cheese: Feel free to substitute or combine different types of cheeses to create your own unique flavor combinations.
- Add-ins for extra flavor: Consider adding other ingredients like chopped celery, red onion, or pickles for an extra layer of taste and texture.
- Don't overcrowd the pan: When grilling or pan-frying the sandwich, avoid overcrowding the pan to ensure even cooking and prevent the bread from becoming soggy.
- Serve with sides: Accompany your tuna melt sandwich with a fresh side salad, a bowl of soup, or some crispy potato chips for a complete meal.
