PINEAPPLE-COCONUT BAKED OATMEAL

Pineapple-Coconut Baked Oatmeal image

This flavor combination is inspired by the tropics. The first thing you'll taste is a pop of sweetness from pineapple, and next comes the coconut flavor. It's warm, somewhat creamy, but still a bit chewy as oatmeal always is, and totally delicious. Feel free to add a sprinkle of coconut or a drizzle of honey or milk when serving.

PINEAPPLE OATMEAL

Oatmeal for breakfast is a standard item, but I like to mix it up a bit. This version gets some natural sweetness from pinapple juice and tidbits. It is definitely worth trying! -Maria Regakis, Somerville, Massachusetts

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your oatmeal bars will be.
  • Don't overmix the batter: Overmixing will make the bars tough. Mix just until the ingredients are combined.
  • Bake the bars until they are just set: Overbaking will make the bars dry. A toothpick inserted into the center of the bars should come out with just a few moist crumbs attached.
  • Let the bars cool completely before cutting them: This will help them to hold their shape.
  • Store the bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.

Conclusion:

Elsie's Pineapple Oatmeal Bars are a delicious and easy-to-make treat that is perfect for breakfast, lunch, or a snack. They are also a great way to use up ripe bananas. With their chewy oatmeal base, sweet pineapple filling, and crunchy topping, these bars are sure to be a hit with everyone who tries them.
