Grandma's Tuna Casserole with Potato Chips and No Noodles image

This is my grandma's recipe. My dad calls it "Toucan Tuna Casserole" because it uses two cans of everything. It is uncommon among tuna casserole recipes because it uses potato chips instead of noodles. Serve with Worcestershire sauce.

My "other mother", Elouise Stone, gave me this recipe when I was a starving college student. Now after 30+ years, my kids and grandkids are keeping the tradition alive! Simple, satisfying, and inexpensive. I use either plain or vinegar flavored thin potato chips.

NO CHEESE TUNA CASSEROLE

No Cheese Tuna Casserole image

When we started looking for healthier ways to eat I had to make some changes to my staple recipes. My mom used to make this with a bag and a half of shredded cheese, white pasta and no veggies. We really enjoy this new version with whole wheat pasta, and seasoned wheat breadcrumbs. Enjoy!

NO-BAKE TUNA NOODLE CASSEROLE - MIDWEST

No-Bake Tuna Noodle Casserole - Midwest image

This is a take on the Tuna Noodle Casserole my mom used to bake my brother and I when we were kids. It was the first meal I ever cooked for myself (when I was in college). Being lazy, impatient and hungry, I figured why bake it? The cheese must be extra sharp...mild or sharp just don't cut it. This recipe is so easily adaptable. Really like tuna? Use a bigger can. Don't like tuna? Use shredded chicken. Have broccoli you need to use? Use broccoli. It's definitely not low-cal, but it is quick and tasty comfort food!

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

1 (6 ounce) can tuna in water, drained
1 (10 ounce) can cream of mushroom soup, undiluted
2 cups extra-sharp cheddar cheese, shredded (can add more or less)
3 large celery ribs, sliced into 1/4 chunks
4 cups button mushrooms, sliced thick
1 large onion, chopped
16 ounces extra wide egg noodles
salt
pepper

Steps:

  • Cook noodles for approximately 10 minutes in salted water and drain when finished-- while noodle are cooking --.
  • In large pot (enough to hold the sauce and cooked noodles) sauté mushrooms for 3 or 4 minutes, add onion and sauté for another minute or two. It's nice to have a little crunch left in the onions. Drain any liquid.
  • Add cream of mushroom soup to pot. As soon as it is hot, add shredded cheddar cheese. Continuously stir. When cheese is melted, add tuna and celery. (I don't cook the celery, only because I like the crunch of the raw celery). Mix well. When mixture is heated through and cheese is completely melted, take off of burner.
  • Drain noodles and add to mixture. I always add the noodles to the mixture (not the other way around), so that if I made too many noodles I don't add them all to the sauce. Stir all ingredients together. Salt and pepper to taste.
  • * You can make this a one-pot dish if you cook and drain noodles first. Then use the same pot to cook the sauce. It will obviously add about ten minutes to the cooking time.

Tips:

  • Use quality tuna: Opt for tuna packed in water or olive oil, as it retains more flavor and nutrients compared to tuna packed in oil.
  • Choose the right type of pasta: Short pasta, such as penne, macaroni, or shells, works best in tuna casserole. Avoid using long pasta, as it can be difficult to mix and eat.
  • Don't overcook the pasta: Cook the pasta according to the package instructions, but be sure not to overcook it, as it will become mushy in the casserole.
  • Use a variety of vegetables: Feel free to add your favorite vegetables to the casserole, such as peas, carrots, celery, or broccoli. This will add flavor and nutrients to the dish.
  • Use a creamy sauce: A creamy sauce is a classic choice for tuna casserole. You can use a store-bought cream of mushroom soup or make your own sauce using milk, flour, and butter.
  • Add some cheese: Cheese is another great addition to tuna casserole. You can use cheddar, Parmesan, or Monterey Jack cheese. If you like a crispy topping, sprinkle some breadcrumbs on top of the casserole before baking.
  • Bake until golden brown: Bake the casserole in a preheated oven until it is golden brown and bubbly. This usually takes about 20-30 minutes.

Conclusion:

Elouise's Tuna Casserole is a classic comfort food that is easy to make and always a hit with the family. With its simple ingredients and delicious flavor, this casserole is sure to become a favorite in your household. So next time you're looking for a quick and easy meal, give Elouise's Tuna Casserole a try. You won't be disappointed!
