When strawberries are at their peak, this is a beautiful, light ending to any dinner. Because of it's color, it's especially appropriate for Valentine's Day. Cooking time includes 2-3 hours chilling time. For a fat-free dessert, omit the crust. Make the layers in individual parfait glasses, and garnish as for the pie.

Steps:
- Mix Eagle Brand and lemon juice together. Fold in Cool Whip. Fold in sliced strawberries. Pour into baked pie shell and put into fridge until ready to serve. Can also be served in glass parfaits.
Tips:
- Use fresh, ripe strawberries for the best flavor. If you can't find fresh strawberries, you can use frozen strawberries that have been thawed and drained.
- If you don't have a rolling pin, you can use a wine bottle or even a glass to roll out the pie crust.
- To prevent the pie crust from shrinking, chill it for at least 30 minutes before baking.
- To make sure the pie crust is cooked through, bake it until it is golden brown.
- Let the pie cool completely before serving. This will allow the filling to set and the flavors to meld.
