Yield 48 each

Number Of Ingredients 5

1 1/2 cups (8 oz.) slivered almonds
1 (8-oz.) pkg. cream cheese, softened
2 oz. Gorgonzola cheese or other blue cheese, crumbled (1/2 cup)
3 tablespoons chopped fresh chives or parsley
48 small red seedless grapes (about 9 oz.)

Steps:

  • Heat oven to 350°F. Place almonds in single layer in shallow baking pan with sides. Bake at 350°F. for 8 to 12 minutes or until golden brown, stirring once. Remove from pan; cool about 5 minutes. Finely chop almonds. 2In medium bowl, combine cream cheese, Gorgonzola cheese and chives; mix well. Wrap about 1 teaspoon cheese mixture around each grape to cover; roll in chopped almonds. Place in single layer in 13x9-inch pan. Cover; refrigerate at least 1 hour or up to 8 hours before serving. 3To serve, if desired, arrange on serving platter in shape of grape cluster; garnish with parsley or grape leaves.

Tips:

  • Choose the right grapes: Use firm, seedless grapes such as green grapes, red grapes, or black grapes. Avoid using grapes that are too ripe or soft, as they will not hold their shape well on the skewers.
  • Use a variety of cheeses: Select cheeses that have different flavors and textures, such as a hard cheese like Parmesan or Manchego, a soft cheese like Brie or Camembert, and a semi-soft cheese like Gouda or Havarti.
  • Cut the cheese and grapes into uniform sizes: This will ensure that they cook evenly on the skewers.
  • Use good quality balsamic vinegar: A good quality balsamic vinegar will have a rich, complex flavor that will complement the cheese and grapes.
  • Don't overcrowd the skewers: Leave some space between the cheese and grapes so that they can cook evenly.
  • Cook the skewers over medium heat: This will prevent the cheese from burning.
  • Serve the skewers immediately: The cheese will be at its best when it is warm and melted.

Conclusion:

An elegant cheese and grape cluster is a simple yet impressive appetizer that is perfect for any occasion. With just a few ingredients and a little bit of time, you can create a delicious and visually appealing dish that your guests will love.
