1 pound ground beef (80% lean)
1 small yellow onion, minced
2 cloves garlic, minced
1/2 cup quick-cooking oats
2 medium carrots, shredded, divided
3 tablespoons tomato paste, divided
Coarse salt and pepper
3 tablespoons olive oil, divided
4 teaspoons all-purpose flour
1 1/2 cups chicken broth
1/2 head green leaf lettuce, trimmed, leaves torn
1/2 cucumber, sliced
1 tablespoon lemon juice

Steps:

  • Combine beef, onion, garlic, oats, half the carrots, 2 tablespoons tomato paste, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Form mixture into 4 patties. In a large skillet, heat 1 tablespoon oil over medium-high. In 2 batches, cook patties until cooked through, about 6 minutes per side. Transfer to a plate and loosely tent with foil.
  • Add flour to skillet and cook, stirring, 1 minute. Add broth and cook, stirring, until sauce thickens, 3 minutes. Stir in remaining tablespoon tomato paste and season with salt and pepper. Toss lettuce, cucumber, and remaining carrots with lemon juice and remaining 2 tablespoons oil. Serve salad with meatloaves and sauce.

1 (10.75 ounce) can condensed tomato soup, divided
1 ½ pounds ground beef
½ cup dry bread crumbs
1 egg, lightly beaten
¼ cup chopped onion
1 teaspoon salt
1 teaspoon pepper
¼ cup water
½ teaspoon prepared yellow mustard
½ cup shredded mozzarella cheese

Steps:

  • In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.
  • Heat a large deep skillet over medium-high heat. Brown the meatloaves in the hot skillet, then reduce heat to medium and cover with a lid. Simmer for about 25 minutes, or until meat is cooked through.
  • Spoon the fat from the skillet, and stir in the remaining soup, water, and mustard. Top with mozzarella cheese, and let simmer uncovered for 10 minutes, stirring sauce occasionally.

I can't remember where I got this recipe, but have been making it for many years. The caramelized meatloaf and veggies are always a big hit. Hope you'll try it!!

1 1/2-2 lb your favorite meatloaf recipe (or see below for mine)
1 lb washed peeled or unpeeled potatoes cut into bite size
1 lb baby carrots or peeled carrots cut into about 1 inch lengths (baby carrots seem to work better though)
1 medium onion cut into thick strips
1/4 c butter or margarine (if using butter, add about a tbs oil)
salt and pepper to taste
garlic powder to taste

Steps:

  • 1. make your favorite meatloaf mixture or take 2lbs lean ground beef, about 1/4 cup ketchup or BBQ sauce (more or less to taste), 1 egg, about 1/4 to 1/2c bread crumbs, 1 sm. chopped onion, 1/2c chopped green pepper and 1-2 cloves minced garlic. season to taste with garlic powder, salt, pepper, and rosemary. For an extra punch...add a 1/4tsp red pepper. Mix to combine. Form into round shape. (I just use the mixing bowl)
  • 2. prepare the potatoes, carrots and onions. Melt the butter in a large electric skillet set to 250 degrees. When hot, add the meatloaf to the center of the pan. Surround with the veggie. Season veggies liberally with salt,pepper and garlic powder.
  • 3. Place the lid on the skillet. Then just walk away. Allow the meatloaf to cook about 45 min. or until desired doneness.
  • 4. This also works well with 1 can cut green beans.

1 1/2 pounds meatloaf mix (ground beef, pork and/or veal)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
1/2 cup ketchup
1 to 2 tablespoons packed light brown sugar
1 tablespoon apple cider vinegar

Steps:

  • Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
  • Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
  • Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
  • Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard

1 small onion, chopped
1/2 cup thinly sliced celery
1/2 cup thinly sliced carrot
2 pounds lean ground beef (90% lean)
