1 tablespoon canola oil
Two 10-ounce cans diced tomatoes with chiles, such as Rotel
1 cup chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
One 15.5-ounce can black beans, drained and rinsed
One 10-ounce bag frozen corn
5 cups shredded cooked chicken (from about 1 small rotisserie chicken)
12 small corn tortillas, cut into quarters
One 8-ounce block Monterey Jack cheese, shredded (about 2 cups)
1/2 cup sour cream
1/3 cup diced red onion
1/3 cup loosely packed fresh cilantro, chopped

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-by-13-inch casserole dish with the oil.
  • Stir together the diced tomatoes with chiles, chicken broth, chili powder, cumin and salt in a large bowl. 1 lb ground beef
1 Tbsp minced onion
1/2 tsp garlic salt
2 can(s) tomato sauce (8 oz each)
1 c sliced black olives
1 c sour cream
1 c small curd cottage cheese
1 pkg tortilla chips
2 c grated cheese (1/2 pound)
3-4 can(s) canned diced green chilies

Steps:

  • 1. Preheat oven to 350'
  • 2. Brown meat in skillet. Drain.
  • 3. Add onion, garlic, olives and tomato sauce.
  • 4. In a bowl, combine sour cream, cottage cheese and chilies.
  • 5. Layer crushed tortilla chips in bottom of a buttered 2 1/2 qt casserole dish.
  • 6. Layer with 1/2 of the meat mixture.
  • 7. Layer with 1/2 of the sour cream mixture.
  • 8. Layer with 1/2 of the grated cheese.
  • 9. Repeat the 4 layers.
  • 10. Garnish with whole tortilla chips, if desired.
  • 11. Bake for 30 minutes.

2 (8 ounce) cans tomato sauce
1 cup chopped black olives
1 cup small curd cottage cheese
1 cup sour cream
3 -4 green chilies, chopped (canned)
1 (6 1/2 ounce) package tortilla chips
2 cups grated monterey jack cheese

Steps:

  • Fry beef until crumbly.
  • Drain off fat.
  • Add onions, garlic salt, tomato sauce and olives to beef.
  • Combine sour cream and cottage cheese with green chilies.
  • Crush tortilla chips slightly.
  • Reserve a few whole ones for the top.
  • Place half of the chips in bottom of well-greased 2 and 1/2 quart casserole.
