My mother made this many times during the summer and for many potlucks and family gatherings. I make it all the time,living in Az,I enjoy salads that are easy to make, good for you and keep you cool.Hope you try it and enjoy it. It is a family favorite I am glad to share.

Number Of Ingredients 11

1 box 12 oz-ronzoni garden delight enriched carrot,tomato,spinach,pasta blend noodles
1 14.5 oz can italian diced tomatoes,with basil,garlic and oregano
1 4.25 oz can of chopped california ripe olives(i use great value brand,any brand will do)
1 medium size onion, chopped and diced
1 16 oz bag of california blend vegetables(carrots,broccoli,cauliflower)
1/2 block of medium cheddar cheese,cut into cubes(i use kraft)
1 tsp. italian seasoning
1/2 tsp.garlic powder
1/4 tsp. black pepper
1 16 oz. bottle of kraft italian salad dressing
parmesan cheese for topping

Steps:

  • 1. Cook pasta according to pkg directions. Drain and cool pasta. Cook your california blend vegetables according to pkg directions,cool.
  • 2. You will need a large salad bowl or container. Add your cooled pasta,vegetables,diced onion,canned black olives,canned tomatoes,all seasonings,cubed cheese.Mix the salad all up.
  • 3. Now add the bottled dressing and mix again. Chill salad overnight. The dressing will soak into the noodles and will not be so heavy later.
  • 4. Take out your salad and sprinkle with grated parmesan cheese and enjoy.
  • 5. *Tips: 1.You can omit onions if you dont like them. 2.add green and red peppers,diced,if you like them 3.add pepperoni slices for a complete meal 4.You can add cubed mozzerella cheese to other cheese too. I like to make it alittle bit different each time. No matter how I make it, my sons love it.It is a good anytime salad to make-enjoy!

Kosher salt
1 pint cherry tomatoes (halved)
1 bell pepper (any color, cored and chopped)
1 shallot (chopped)
1 cup marinated artichoke hearts (6 ounces)
1/4 cup pitted kalamata olives
6 pepperoncini, (chopped)
6 to 8 ounces salami, (sliced into bite size pieces )
6 ounces mozzarella cheese, (torn (or mozzarella cheese balls))
½ cup packed chopped fresh parsley
½ cup packed chopped fresh basil leaves
¼ cup olive oil
2 tablespoons white wine vinegar
2 garlic cloves, (minced)
1 teaspoon dried oregano
½ to 1 teaspoon crushed red pepper flakes
Kosher salt and black pepper

Steps:

  • Cook the pasta in boiling water according to package instructions until the pasta is cooked to al dante (don't forget to salt your water). Drain

This is one of my family's favorite summer meals. The creamy Italian dressing is really hard to find anymore, the last time I made it, I used a creamy Caesar dressing. Not quite the same, but still yummy! I usually throw in an extra can of the artichoke hearts. You can also add grape tomatoes, cucumbers, bell peppers - almost anything you might want in it. I serve it with toasted, buttered french bread.

1 -1 1/2 lb hard salami, cubed (about 12 inch thick)
