Quick, homemade Egyptian dukkah recipe with nuts, seeds, and a few warm spices. I like to use a combination of three nuts here (hazelnut, almonds and walnuts), but you can use just one if you like. Use dukkah as a snack; to coat meat, chicken or fish; or as a nutty finishing touch over soup, salad or even roasted vegetables. Store in tight-lid mason jar for up to 2 weeks.

1/2 cup hazelnuts
3 tbsp almonds
4 tbsp white sesame seeds
3 tbsp shelled pistachios
1 tbsp fennel seeds
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne pepper
kosher salt

Steps:

  • Place the hazelnuts and almonds in a dry cast iron pan (do NOT add oil). Toast briefly over medium-high heat, tossing regularly, until the nuts gain some color (watch for nuts to turn a nice golden brown). Transfer to a side dish for now.
  • Place the sesame seeds in the same skillet and return to the heat. Toast over medium heat, tossing regularly, until the sesame seeds turn golden brown (this will be fairly quick so watch carefully).
  • Add the toasted nuts and sesame seeds to the bowl of a small food processor fitted with a blade. Add the pistachios, fennel seeds, spices, and a generous dash of kosher salt. Pulse for a few seconds until you reach a nice coarse mixture (Do not over process the dukkah. The mixture should not be too fine. See photos and video for exact texture).
  • Transfer the dukkah to a bowl to serve. Add a small bowl of extra virgin olive oil and your favorite bread for dipping (I like pita bread or even Jerusalem bagel). You can also store the dukkah in a tight-lid jar for up to 2 weeks to use as a topping for salad, soup, chicken, meats, or roasted vegetables!

3 garlic cloves, crushed
1 teaspoon paprika

Steps:

  • Heat the oil in a large frying pan; add the garlic and sauté gently for 2-3 minutes.

½ tsp chilli powder
3 tsp cumin seed , lightly crushed
sprinkling crushed chillies (optional)
zest and juice 1 lime , plus wedges to serve
about 20 large prawns , shells off but tails still on
2 tbsp seasoned flour
1 egg , beaten
vegetable or groundnut oil , for frying
bunch coriander , roughly chopped
6 tbsp mayonnaise

Steps:

  • Mix the breadcrumbs, chilli powder, cumin, crushed chillies, if using, and lime zest with ½ tsp salt and lots of black pepper. Spread over a plate. Toss the prawns in the flour, then dip them into the egg and then into the crumbs. Shake off excess crumbs. Can be chilled in one layer for up to one day ahead.
  • When ready to cook, heat a few centimetres of oil in a large, deep frying pan. The oil is hot enough when a few crumbs tipped into it sizzle and turn brown. Fry the prawns in batches for 2 mins, turning halfway, until the crumbs are crisp and golden all over. Lift them onto kitchen paper to drain (they will keep in a low oven for 15 mins if necessary), then serve on a warm plate, with lime wedges scattered around. Mix the lime juice and coriander into the mayonnaise and serve alongside.

1 dried ancho peppers or 1 similar dried chili
2 tablespoons vegetable oil
1 onion, chopped
3 garlic cloves, roughly chopped
8 tomatoes
1 teaspoon ground cumin
1/2 cup chicken stock
1 cup ground almonds
3/4 cup creme fraiche
1/2 lime
2 lbs cooked prawns
salt
fresh coriander, to garnish
spring onion, strips to garnish
cooked rice, to serve
warm tortilla, to serve

Steps:

  • Place the dried chili in a heatproof bowl and pour over boiling water to cover.
  • Leave to soak for 30 minutes until softened.
  • Drain, remove the stalk, then slit the chili and scrape out the seeds with a small sharp knife.
  • Chop the flesh roughly and set it aside.
  • Heat the oil in a frying pan and fry the onion and garlic until soft.
  • Cut a cross in the base of each tomato.
  • Place them in a heatproof bowl and pour over boiling water to cover.
  • After 3 minutes, lift the tomatoes out on a slotted spoon and plunge them into a bowl of cold water, drain.
  • The skins will have begun to peel back.
  • Skin the tomatoes completely, then cut them in half and scoop out the seeds.
  • Chop the flesh into 1/2 inch cubes and add it to the onion mixture, with the chopped chilli.
  • Stir in the ground cumin and cook for 10 minutes, stirring occasionally.
  • Tip the mixture into a food processor or blender.
  • Add the stock and process on high speed until smooth.
  • Pour the mixture into a large saucepan, add the ground almonds and stir over a low heat 2 to 3 minutes.
  • Stir in the creme fraiche until it has been incorporated completely.
  • Squeeze the juice from the lime and stir it into the sauce.
  • Season with salt to taste, then increase the heat and bring the sauce to simmering point.
  • Add the prawns and heat for 2 to 3 minutes, depending on the size, until warmed through.
  • Serve on a bed of rice and offer warm tortillas separately.

225 g fresh prawns, shelled and deveined or 225 g frozen prawns, shelled, de-frosted and deveined
2 tablespoons flavourless oil
1 large onion, chopped
1 teaspoon minced fresh ginger
2 garlic cloves, minced
1 cardamom pod
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon chili powder
450 g tomatoes, chopped
salt
1 -2 tablespoon chopped coriander leaves (to garnish)

Steps:

  • In a large saucepan, heat the oil then add the chopped onions, ginger, garlic and cardamom and fry gently for about 10 minutes till softened and light-golden brown.
  • Then add in the spices and stir and cook for another 10 minutes (you may pour in a little water if you find the spices sticking to the bottom of the pan).
  • Add in the prawns and stir them so they are evenly coated with the spice mixture then add in the chopped tomatoes and season with salt and bring it to a simmering point.
  • Then reduce heat to medium-low and cook for about 20-25 minutes uncovered, stirring occasionally, by which time most of the liquid will have evaporated and the tomatoes will have reduced to a thick sauce.

black pepper (freshly ground)
40 green king prawns
2 large egg yolks (at room temperature)
1 teaspoon Dijon mustard
1 2/3 cups vegetable oil
2 tablespoons tequila
1 teaspoon parsley (chopped)

Steps:

  • Peel and devein prawns leaving tail intact.
  • Combine lime juice, olive oil and salt and pepper in a large bowl. Add prawns, toss well to coat, and marinate in fridge for about 1 hour.
  • Meanwhile make the mayonnaise, using either an electric whisk or a hand whisk. Sit a medium-sized mixing bowl on a damp cloth to stop it moving.
  • Put egg yolks and mustard in the bowl and season well. Pour a drop of oil onto the eggs and blend. Repeat, then continue to add the oil, drop by drop, until the mixture starts to thicken and becomes pale and glossy. Then you can add the oil faster in a thin, steady stream.

  • Preheat the barbecue or chargrill pan to high.
