Steps:

  • Heat oil in a saucepan over medium heat. Add vermicelli; cook, stirring constantly, until golden brown, 3 to 5 minutes. Remove from heat. Pour in rice and salt; stir until coated with oil.
  • Reduce heat to low. Cook the rice mixture, stirring constantly, until rice turns pasty white, 3 to 5 minutes.
  • Bring water to a boil in a saucepan.

1 lb stew meat
1 onion
1 chicken bouillon cube
2 fresh tomatoes, blended in blender to make smooth
4 fresh garlic cloves, crushed
1 tablespoon tomato paste
2 cups short-grain white rice (Egyptian rice)
1/4 cup fideos, noodles
1/4 cup butter
2 cups oil, some for frying bread
1 white pita bread
1 tablespoon cumin
salt & pepper
3 tablespoons white vinegar

Steps:

  • To prepare bread for bottom of dish: Take pita bread and rip into bite size pieces. In a frying pan, add about a 1/4 stick of butter, add bread pieces and fry until golden brown and crisp. Put these pieces in a glass baking dish, preferably a square sized dish. Set aside.
  • Then add to same pan, a little more butter, salt, approximately 2 cloves of crushed fresh garlic, and a teaspoon or so of cumin stir around a bit until you can smell aroma, then add fried bread pieces to this mixture, stir to coat bread and put back into glass baking dish. Set aside.
  • To prepare meat: put some butter in a pot, stir fry meat until brown, add 1 onion quartered, salt & pepper, 1 cube of chicken bouillon and water to cover meat. Bring to a boil, turn down to simmer, cover and cook until tender, approximately 2 hours. After meat has cooled, take out chunks of meat and put in a bowl, set aside. Reserve soup from the meat separately.
  • To prepare the rice: Put some butter into a pot, add shareya (fideo noodles) like a handful or so, keep stirring until golden brown, not too dark, but very golden. Then add two cups of rice, stir a little bit until some of the rice turns an opaque white. Add 2-1/4 cups of water and salt to taste. Bring to a boil, cover and turn down to simmer, cook until tender. Test the rice tenderness after about 35 minutes.
  • Now take some of the soup from meat and add to the top of the bread pieces in baking dish to saturate.Add cooked rice on top of bread pieces. Slowly spoon remainder of soup onto rice, looking at glass dish sides to see level of soup, should reach just to top of rice, don't worry, this doesn't have to be exact. Now you're ready to make the sauce and fry the meat to put on top.
  • To prepare red sauce: In a pan, add a little oil or butter, crushed tomato, a half teaspoon of tomato paste, salt & pepper, 2 cloves of fresh crushed garlic and cumin. Add also approximately 3 tablespoons of vinegar, stir this until you smell aroma and it is a bit smooth. It should be a bit thick, not watery, but if too thick you can add a bit of water. Spread with a wooden spoon atop the rice to cover.
  • To fry meat: In a pan add a bit of butter or oil, the meat, just a touch of tomato paste, about a tablespoon of fresh crushed garlic, salt & pepper, a teaspoon of cumin. Cook until meat is golden fried.
  • Spoon this atop the rice and serve. Enjoy!

4 (12 ounce) whole fish, each about 12 oz
1 lemon, juice of
salt, to taste
fresh ground black pepper, to taste
3 garlic cloves, crushed
1 teaspoon ground cumin
2 medium onions, chopped
2 tablespoons oil
2 cups long grain rice
3 1/2 cups hot water
flour
oil (for frying, preferably olive oil)
lemon wedge (to garnish)
parsley sprig (to garnish)

Steps:

  • Scale and gut the fish and leave the heads on. ( well, you don't have to if you don't want to).
  • Rinse and wipe dry.
  • Rub surfaces and cavities with lemon juice, salt and pepper.
  • Cover and leave aside for 30-45 minutes. Prepare the garlic and mix with the cumin.
  • Gently fry the onions in oil in a deep pan for 15-20 minutes until very soft and golden.
  • Wash rice, drain and add to onions.
  • Stir over medium heat for 2-3 minutes, then add the hot water.
  • Bring to a boil, reduce heat to low, cover pan and cook gently for 20 minutes.
  • Make 3-4 deep slits on each side of the fish and fill slits with garlic-cumin mixture.
  • Coat fish with flour and shallow fry in hot oil until golden brown and cooked.
  • Remove fish and keep it hot.
  • Add about 2 tablespoons of the oil in which the fish was cooked to the cooked rice. Stir through with a fork, cover pan and leave rice for 5 minutes.
  • Pile rice on a platter, arrange fish on top and garnish with lemon wedges and parsley sprigs.

Steps:

  • Preheat the oven to 400 degrees.
  • Heat the oil & saute the onion but do not let it brown. Add the rice to the pan & cook for 2 minutes or until the rice becomes translucent.
  • Place the rice, water, chicken stock, & spices in an ovenproof casserole dish. Cook uncovered for 20 minutes or until all the liquid is absorbed.

I saw this dish being made on a travel/food program so the measurements are a bit of a guess. I would say this would be about 6 serves. The tomato sauce is quite vinegary. If you a seasoned cook you could cook the lentils, rice and macaroni all together adding the ingredients at the right time so everything finishes cooking at the same time. I like to add a good sprinkle of chilli oil just before serving.

500 g lentils, brown
2 cups rice
2 cups elbow macaroni
1 cup oil
2 garlic cloves, crushed
1 hot chili pepper, cleaned and chopped
4 tomatoes, ripe and chopped
1/2 cup water
2 tablespoons vinegar
1 teaspoon cumin, ground
1 teaspoon salt (to taste)
1 onion, cut in rings

Steps:

  • Pick over the lentils and wash well and drain. In a large pot add lentils and cover with cold water so the water is 3cm above the lentils. Bring to boil and reduce heat, cover and simmer for about 30 mins until tender. You make need to add more water through the cooking, stir occasionally.
  • Cook the rice in your preferred method (I use a rice cook so its easy). If you want cook the rice in stock or add a stock cube.
  • For the sauce heat 1/2 cup oil in large fry pan and saute the garlic and chilli for a few minuets Add the tomatoes, water and vinegr and bring to boil. Reduce heat and simmer until cooked down - about 20 minutes.
  • Bring a pot of salted water to the boil and cook the macaroni. Drain and set aside.
  • Heat the remaining 1/2 cup oil and saute the onion until golden brown. You can also fry until crispy if you like. Remove and drain on paper towels.
  • To serve the dish divide and layer ther lentils, then rice, then macaroni followed by the tomato sauce and fried onions.

3 tablespoons olive oil
1/2 onion, finely chopped
2 minced garlic cloves
3/4 cup brown lentils, rinsed
2 cups water
1 (28 ounce) can petite diced tomatoes (or reg diced whirred in the blender)
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground allspice

1/4 teaspoon pepper
2 cups dry pasta (macaroni works best)

Steps:

  • In a large dutch oven with a lid, Saute onions in olive oil until nicely browned.
  • Add garlic. cook about 45 seconds.
  • Add lentils and water. bring to a boil.
  • Lower heat to med low, cook about 25 minute covered.
  • Raise heat to medium, add tomatoes and cumin, coriander, and allspice.
  • Cover, and Cook 10 minutes.
  • Meanwhile cook pasta in boiling water. drain.
  • Save that pot, you will need it shortly.
  • Remove lid from tomato mixture and add salt and pepper. cook another 10 minute.
  • In that saved empty pasta cooking pot, heat one Tbs oil.
  • Add cumin seeds, when start to pop add cooked pasta and rice (and optional garbanzos). toss then dump in with tomato/lentil mixture.
  • Serve with toasted pita bread on the side (I like to melt some cheese in it since I'm bein' so healthy!).

1 tablespoon raisins
1 tablespoon peanuts

  • Place the olive oil into the bottom of the crock pot.

Steps:

  • Rinse the rice under running water thoroughly and set aside in a colander to drain.
