PAN BAGNAT SANDWICH WITH TUNA, ANCHOVIES, AND PARSLEY

Pan Bagnat Sandwich with Tuna, Anchovies, and Parsley image

When you think about it, "Pan Bagnat" is just a fancy way of saying "the best of all possible summer sandwiches." Unlike the typical tuna on wheat, this Provençal classic only gets better as sits, making it just the thing for picnics, backyard suppers, and last-minute road trips. And its briny, garlicky flavors beat plain old mayo any day.

Yield Serves 2

Number Of Ingredients 13

1 crusty baguette, ends trimmed off
Olive oil (for drizzling)
1 garlic clove, smashed
4 jarred anchovy fillets
1/4 cup thinly sliced onion
1 tablespoon red wine vinegar
1/4 teaspoon salt, plus more
1/4 teaspoon freshly ground black pepper, plus more
1 (6-ounce) jar tuna fillets in olive oil, drained, flaked
1/4 cup fresh parsley leaves
2 hard-boiled eggs, peeled, sliced
2 tablespoons pitted and halved Nicoise olives
1 medium ripe tomato, cored, thinly sliced

Steps:

  • Cut baguette in half crosswise with a serrated knife, then split each half lengthwise. Drizzle cut sides of bread with oil and rub with garlic. Arrange 2 anchovies on top half of each baguette.
  • Toss onion and vinegar in a medium bowl and season with 1/4 tsp. each salt and pepper. Let stand 5 minutes. Add tuna and parsley and toss gently to combine. Taste and adjust seasoning. Pile tuna mixture on bottom half of each baguette. Top tuna mixture with eggs and olives.
  • Arrange tomato slices on top of anchovies and close sandwiches. Wrap sandwiches tightly in foil and place a heavy pot or skillet on top. Add a few heavy objects such as cans to weigh down pot and press down on sandwiches. Let sit at room temperature at least 40 minutes and up to 1 hour. Unwrap, slice each sandwich in half crosswise (if desired), and serve.

Time 15m

Yield Six servings

Number Of Ingredients 10

6 hard-boiled eggs
3 tablespoons butter, at room temperature
1 tablespoon anchovy paste
1 tablespoon finely chopped chives
1 tablespoon mayonnaise
1 teaspoon freshly squeezed lemon juice
1 teaspoon olive oil
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
Sliced pimento, olives or green pepper, or rolled anchovy fillets, for garnish

Steps:

  • Remove the eggs from their shells and cut them lengthwise or crosswise in half. If they are cut crosswise, cut off a thin slice from the bottom of each shelled half so that the eggs, when stuffed, will sit upright.

  • Fill the cavity of each egg half with equal portions of the mixture, using a spoon or pastry tube. Decorate the top of each with small slices of pimento, olives or green pepper, or with rolled anchovy fillets.

Yield Makes 12 stuffed eggs

Number Of Ingredients 7

6 hard-cooked large eggs
3 tablespoons sour cream
6 Kalamata or other brine-cured black olives, pitted and minced
1/2 teaspoon anchovy paste
1/2 teaspoon white-wine vinegar
2 to 3 tablespoons minced fresh flat-leafed parsley leaves
Garnish: Black olive slivers and chopped parsley leaves

Steps:

  • Cut a paper-thin slice off both ends of eggs and halve eggs crosswise. Force yolks through a sieve into a bowl (or mash with a fork) and stir in remaining ingredients and salt and pepper to taste. Transfer filling to a pastry bag fitted with a large plain or decorative tip and pipe into whites, mounding it. The stuffed eggs may be made 6 hours ahead and chilled, covered.
  • Just before serving, garnish eggs.

Tips:

  • Use fresh, high-quality ingredients. This will make all the difference in the flavor of your dish.
  • Don't overcook the eggs. The yolks should be slightly runny for the best texture and flavor.
  • Be careful not to overstuff the eggs. You want them to be able to hold their shape without breaking.
  • Chill the eggs before serving. This will help them to firm up and make them easier to handle.
  • Garnish the eggs with chopped parsley, dill, or chives. This will add a pop of color and flavor.
