1 tablespoon olive oil, or to taste
½ cup finely chopped ham
2 tablespoons grated Gruyere cheese, divided
½ cup heavy whipping cream
salt and ground black pepper to taste
2 eggs
¼ teaspoon chopped fresh chives

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Boil water in a kettle.
  • Grease a small lidded casserole dish with olive oil. Distribute diced ham over the bottom and sprinkle with 1 tablespoon Gruyere cheese. Pour cream on top and season with a little pepper.
  • Crack eggs into the casserole dish one at a time, making sure egg yolks remain intact. Sprinkle with remaining 1 tablespoon Gruyere cheese and fresh chives. Season with salt and pepper. Cover casserole dish and place into a roasting pan. Pour in enough boiling water so it reaches about halfway up the casserole dish.

8 ounces lump or backfin crabmeat
Unsalted butter, for greasing
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
3 teaspoons Dijon mustard
2 to 3 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, such as Tabasco
1/2 cup panko breadcrumbs
2 tablespoons chopped herbs, such as parsley, dill or chives, plus more for serving
2 to 4 eggs (1 for each ramekin)
2 tablespoons creme fraiche or heavy cream
Boiling water
2 teaspoons olive oil
Toasted bread and salad, for serving (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Pick through the crabmeat and remove and discard any shells; set aside. Grease the insides of the ramekins with butter. Lightly sprinkle the bottom of each ramekin with salt.
  • Whisk together the mayonnaise, 2 teaspoons of the Dijon, 2 teaspoons of the lemon juice, the Worcestershire and hot sauce and 1/4 cup of the panko in a medium bowl. Gently fold in the crabmeat and 2 tablespoon of the herbs. Season to taste with salt and pepper. Add up to 1 more teaspoon of the remaining lemon juice, if desired.
  • Divide the crab mixture evenly among the ramekins. Using the back of a spoon, create a small well in the center of the mixture.
  • Gently crack or slide 1 egg into each well and season with salt and pepper. Spoon the creme fraiche or drizzle the heavy cream around the eggs, evenly dividing it among the ramekins.
  • Place the ramekins inside a baking dish and transfer to the oven. (You may also want to place the baking dish on a baking sheet to catch any spills.) Carefully pour enough boiling water into the baking dish to come 3/4 of the way up the sides of the ramekins.
  • Bake until the egg whites are just set, but the yolks still jiggle when you move the baking dish, 15 minutes to 30 minutes, depending on the size of the ramekins.
  • Meanwhile, heat the oil over medium heat in a small nonstick skillet, and stir in the remaining 1/4 cup panko. Cook, stirring, until toasted, 2 to 3 minutes. Stir in the remaining 1 teaspoon Dijon. Remove from the heat and season with salt and pepper.
  • When the eggs are done baking, carefully remove the baking dish from the oven. Using a thin spatula and oven mitts and/or tongs, carefully remove the ramekins from the water and set on a kitchen towel to dry the bottoms. Transfer each ramekin to a plate, top with the toasted panko, and sprinkle with herbs. Serve with toasted bread and salad.

2 teaspoons unsalted butter, room temperature
2 ounces Fontina cheese, cut into 1/2-inch cubes
4 large eggs
4 teaspoons creme fraiche
1 teaspoon chopped fresh chives

Steps:

  • Preheat oven to 250 degrees.
  • Fit a rimmed baking sheet with a wire rack. Place tomato slices on rack and drizzle with olive oil; season with salt and pepper. Transfer to oven and bake until dry and wrinkled, about 3 hours.
  • Increase oven temperature to 350 degrees. Brush two 6-ounce ovenproof bowls with butter. Place two slices of tomato in the bottom of each bowl, overlapping slightly. Divide cheese evenly between bowls. Crack 2 eggs into each bowl; season with salt and pepper.

8 eggs

1/4 cup cream
1/4 cup freshly grated Parmesan
1 1/2 ounces prosciutto (about 4 slices), cut in 1/4-inch strips
2 tablespoons olive oil
1 small onion, finely diced
1 red pepper, seeds and ribs removed, cut in 1/4-inch strips
1 green pepper, seeds and ribs removed, cut in 1/4-inch strips
1 clove garlic, minced
1 (14 1/2-ounces) can diced, peeled tomatoes, drained
1/2 teaspoon red pepper flakes, optional
1 tablespoon chopped fresh basil leaves

Steps:

  • Special equipment: 4 (1-cup) capacity ramekins
  • Preheat the oven to 375 degrees F. In a small saucepan, bring 2 cups water to a boil.
  • Smear the bottom of each ramekin with the butter. For each serving, crack 2 eggs into a small bowl or dish, being careful not to break the yolks, then slide into a prepared ramekin. Season with the salt and pepper, drizzle with 1 tablespoon of the cream, and sprinkle with 1 tablespoon of the Parmesan. 6 ounces hot maple flavored pork sausage (Southern style), crumbled
3 cups water
1 cup half-and-half
Kosher salt
1 cup stone-ground grits or course polenta
Freshly cracked black pepper
4 ounces grated Gruyere
4 farm fresh eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook the sausage in a skillet over medium-high heat until cooked through. Remove the sausage to a paper towel to drain. Use the rendered sausage fat to grease 4 large individual ramekins, (gratin dishes or individual cast iron pots work too) and arrange them on a rimmed sheet tray.
  • In a large saucepan, over medium heat, bring the water and half-and-half to a boil and season with salt, to taste. Rapidly whisk in the grits. Continue whisking while returning to a boil, about 5 to 7 minutes. Reduce the heat to a simmer and cook until thick and creamy, stirring frequently, about 20 minutes. Season with pepper and more salt, if needed.
  • Divide the cooked grits between the prepared baking dishes and top each with cooked sausage and grated cheese. Make a divot with the back of a spoon into the cheese and sausage topped grits. Crack the eggs, 1 at a time, into a small bowl and top the ramekins with the eggs. Bake until the egg whites are almost, but not fully set, about 10 to 15 minutes.
