1 medium zucchini, cut lengthwise in half, then cut crosswise into 1/2-inch slices (2 cups)
1 package (9 ounces) refrigerated cheese-filled ravioli
1 cup freshly shredded Parmesan cheese

Steps:

  • Heat oil in 12-inch skillet over medium-high heat. Cook eggplant in oil 5 minutes, stirring occasionally. Stir in tomatoes and basil. Heat to boiling; reduce heat. Cover and simmer about 15 minutes, stirring once or twice, until eggplant is tender.

The Raviolini are tiny pillows of ravioli and I buy mine at my local Trader Joe's. Zaar didn't accept the raviolini as an ingredient so I had to list the ingredient as plain ravioli (but you should use the tiny ones).

1 tablespoon extra virgin olive oil
1 eggplant, half the skin peeled to make stripes and the flesh chopped into 1/4 inch cubes
2 garlic cloves

32 ounces chicken broth
1 lb ravioli
1 cup basil leaves, torn
grated parmigiano-reggiano cheese, for topping

Steps:

  • In a small soup pot, melt the butter and the olive oil over medium heat. Turn the pan and coat its surface. I am a fan of eggplant soup, and this one is a winner, creamy-textured and bright tasting. Charring the eggplant gives it a smoky flavor, but as opposed to some rustic versions, the soup has a smooth texture and a lovely pale color. It gets a good squeeze of lemon juice, a drizzle of olive oil and a sprinkling of the Middle Eastern spice mixture za'atar, made with wild thyme and sesame, now widely available. Make sure to choose small, firm eggplants. Serve the soup chilled or hot, in small portions.

2 pounds small firm eggplants
5 tablespoons olive oil
2 cups sliced white or yellow onion
Salt and pepper
6 garlic cloves, minced
Pinch cayenne
6 cups chicken broth or mild vegetable broth
3 to 4 tablespoons lemon juice
1/2 teaspoon lemon zest
1 tablespoon za'atar, available in Middle Eastern groceries
2 teaspoons chopped parsley

Steps:

  • Poke 2 or 3 holes in eggplants with a paring knife, then place on a baking sheet under hot broiler, about 2 inches from flame. Cook for 3 or 4 minutes, allowing skins to blacken and char. Turn and cook on other side until eggplants have softened completely, about 4 minutes more. Set aside to cool, then remove and discard skins and roughly chop eggplant flesh.

Dumplings
1 tablespoon olive oil
3 shallots, chopped
1/2 cup (packed) soft fresh goat cheese (such as Montrachet), crumbled
1/2 cup chopped seeded plum tomatoes
1/4 cup chopped fresh basil
20 wonton wrappers

Steps:

  • For soup:
  • Preheat oven to 375°F. Place eggplant cut side down on oiled rimmed baking sheet. Bake until very tender, about 1 hour. Cool.
  • Melt butter in heavy large pot over medium heat. Add onion, fennel, potato, leek, garlic and oregano; sauté 10 minutes. Add wine; cook 2 minutes. Add 7 1/2 cups stock; simmer until vegetables are tender, 15 minutes. Scoop out eggplant flesh; discard skins. Add eggplant to soup. Simmer 10 minutes. Working in batches, puree soup in blender.   • Heat oil in small skillet over medium heat. Add shallots; sauté 4 minutes. Cool. Mix in cheese, tomatoes and basil. Season filling with salt and pepper. Place wrappers on work surface. Place 2 teaspoons filling in center. Brush edges with water. Fold wrappers diagonally in half; press edges to seal. (Can be made 4 hours ahead. Place in single layer on floured baking sheet. Cover; chill.)
  • Bring soup to simmer, thinning with more stock if necessary. Cook dumplings in pot of boiling salted water until tender, about 1 minute. Ladle soup into bowls. Using slotted spoon, place 2 dumplings atop soup in each bowl.
