GRILLED EGGPLANT PANINI

GRILLED EGGPLANT PANINI image

Categories     Sandwich     Vegetable     Vegetarian     Quick & Easy

Yield 4 4

Number Of Ingredients 9

2 tablespoons reduced-fat mayonnaise
2 tablespoons chopped fresh basil
2 tablespoons extra-virgin olive oil, divided
8 1/2-inch slices eggplant (about 1 small)
1/2 teaspoon garlic salt
8 slices whole-grain country bread
8 thin slices fresh mozzarella cheese
1/3 cup sliced jarred roasted red peppers
4 thin slices red onion

Steps:

  • 1. Preheat grill to medium-high. 2. Combine mayonnaise and basil in a small bowl. Using 1 tablespoon oil, lightly brush both sides of eggplant and sprinkle each slice with garlic salt. With the remaining 1 tablespoon oil, brush one side of each slice of bread. 3. Grill the eggplant for 6 minutes, turn with a spatula, top with cheese, and continue grilling until the cheese is melted and the eggplant is tender, about 4 minutes more. Toast the bread on the grill, 1 to 2 minutes per side. 4. To assemble sandwiches: Spread basil mayonnaise on four slices of bread. Top with the cheesy eggplant, red peppers, onion and the remaining slices of bread. Cut in half and serve warm.

Tips:

  • Choose the right eggplant. Look for small, firm eggplants that are free of blemishes. Avoid large, seedy eggplants, as they can be bitter.
  • Slice the eggplant evenly. This will help it cook evenly. If the slices are too thick, they will take longer to cook and may not cook through.
  • Salt the eggplant slices. This will help to draw out the bitterness. Let the eggplant slices sit for at least 30 minutes before cooking.
  • Cook the eggplant slices over medium heat. This will help to prevent them from burning. Cook the slices until they are tender and slightly browned.
  • Use a good quality mozzarella cheese. Fresh mozzarella will melt better and taste better than pre-shredded mozzarella.
  • Toast the bread. This will help to make the panini more crispy and flavorful.
  • Serve the panini hot. This is when it will be at its best.

Conclusion:

The eggplant panini is a delicious and easy-to-make sandwich that is perfect for lunch or dinner. It is a great way to use up leftover eggplant, and it can be customized to your liking. With its crispy bread, tender eggplant, and melted cheese, the eggplant panini is sure to be a hit with everyone who tries it.
