He said this was a keeper for sure. You are welcome to use more garlic or spice depending on your taste, but this way is good. One good size eggplant should cover both the soup and the dumplings. Time does not include draining time for eggplant.

1 1/2 cups eggplants (cut into 1 inch cubes)
1 tablespoon salt
2 tablespoons olive oil
1 medium onion (cut in half, then quarter)
4 garlic cloves (chopped)
2 tablespoons wine
4 cups water
1 (15 1/2 ounce) can garbanzo beans (mash half of them)
2 (14 1/2 ounce) cans chopped tomatoes (changed from whole tomatoes..I agree with the reviewer)
3 celery ribs (cut into 1 inch pieces)
2 carrots (cut into 1/2 inch pieces)
1 sweet pepper (any color, cut in half, remove seeds, cut in slices)
2 cups green beans (cut diagonally into 1 inch pieces)
1/2 teaspoon dried marjoram
1/2 teaspoon dry basil
1/2 teaspoon dry oregano
1/2 teaspoon ground pepper
1 teaspoon salt
1/2 cup eggplant (chopped about pea size)
1 tablespoon olive oil
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup milk
1/2 teaspoon oregano

Steps:

  • SOUP:.
  • Peel eggplant, cut all eggplant into 1 inch cubes, sprinkle with salt.
  • Put in a strainer to drain for an hour, then dry with paper towel. Put aside 1/2 cup for dumplings.
  • Heat large pot and add olive oil.
  • Add eggplant (all except the 1/2 cup), onion, garlic and saute for 3 minutes.
  • Add wine and reduce for 30 seconds.
  • Add water.
  • Stir in all garbanzo beans.
  • Stir in remaining soup ingredients.
  • Bring to boil and reduce heat to simmer, until all vegetables are tender.
  • DUMPLINGS:.
  • Heat small pan on stove. Add olive oil.
  • Saute eggplant for 3 minutes. Set aside to cool.
  • Mix flour, salt, baking powder, and milk in a bowl.
  • Blend in eggplant and oregano.
  • Using a tablespoon, drop spoonfuls onto simmering soup, about 12 dumplings.
  • Keep in mind that the dumplings will expand as they cook.
  • Cook 15 minutes uncovered, 15 minutes covered.
  • Serve in bowls, sprinkle with feta cheese.

1 (1 1/2 lb) eggplants, halved lengthwise
1 small onion, halved
6 garlic cloves, peeled
2 tablespoons vegetable oil

4 cups chicken stock (or more) or 4 cups low sodium chicken broth (or more)
1 cup whipping cream
3/4 cup goat cheese, crumbled

Steps:

  • Preheat oven to 400°F.
  • Place tomatoes, eggplant, onion and garlic on large baking sheet. Brush vegetables with oil. Roast until vegetables are tender and brown in spots, about 45 minutes.
  • Remove from oven.
  • Scoop eggplant from skin into heavy large saucepan; discard skin. Add remaining roasted vegetables and thyme to same saucepan.
  • Add 4 cups chicken stock and bring to boil. Reduce heat to simmer. Cook until onion is very tender, about 45 minutes.

8 cups (2 quarts) prepared tomato soup
1 Parmesan rind
1 1/3 cups all-purpose flour
2 large eggs, beaten
2 cups Italian-style breadcrumbs
Salt and freshly ground black pepper
1 medium eggplant, peeled and cut into 1-inch cubes
Vegetable oil, for frying
8 slices whole milk mozzarella
2 tablespoons fresh basil, cut into chiffonade

Steps:

  • Put the soup in a medium pot, add in the Parmesan rind and bring to a slight simmer.
  • Set up a standard breading station with the flour, eggs and breadcrumbs in separate shallow bowls. Lightly season each station with salt and pepper. In batches and using a spider or slotted spoon, dredge each eggplant cube in flour and shake off the excess; dip in egg and let the excess drip off; and then coat in breadcrumbs. Set aside on a wire rack.
  • Heat 1/2 inch of oil in 2 large straight-sided saute pans over medium heat. Working in small batches, fry the eggplant pieces, turning once, until golden brown, about 4 to 5 minutes a side.
  • Preheat the oven to broil. Ladle the soup into individual ovenproof crocks on a parchment-lined baking sheet. Cover each crock with 2 slices of mozzarella. Broil until golden brown and bubbly. Top each crock with several fried eggplant cubes and some basil chiffonade.

2 tablespoons virgin olive oil
1 small eggplant, peeled and chopped (1 pound)
2 shallots, peeled and minced
1 garlic clove, peeled and minced
2 1/2 cups vegetable stock or 2 1/2 cups chicken stock
salt and pepper
1 medium red pepper, stemmed, seeded, and quartered
2 tablespoons light cream or 2 tablespoons evaporated milk
salt and pepper

Steps:

  • Heat oil in the saucepan, and saute the eggplant and shallots together, over a low heat, stirring frequently, for about 15 to 20 minutes.
  • Do not allow eggplant to brown.
  • Add the stock, and adjust the salt and pepper to taste.
  • Remove from heat, stir in the pepper cream, and serve immeadiately.
  • PEPPER CREAM: Place the pepper pieces under a broiler, and heat, turning until the skin starts to change color.

1 large eggplant
3 tablespoons butter
1 medium onion, chopped
4 cups sodium-free chicken stock or 4 cups vegetable stock
1 1/2 lbs boiling potatoes, unpeeled and chopped*
1 tablespoon garlic, minced
1 1/2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
salt, to taste
1/2 cup plain yogurt (optional)

Steps:

  • Place oven rack about 10 inches from broiler.
  • Broil eggplant until charred all over, turning as needed. This will take anywhere from 25 to 40 minutes depending on size of eggplant.
  • Let cool, remove skin and coarsely chop.
  • In medium large stockpot, melt butter over medium heat.
  • Saute onions and garlic until soft. DO NOT LET GARLIC BURN.
  • Stir in paprika,pepper,cumin,salt and eggplant.
  • Turn heat to high, and stirring constantly, cook about 2 minutes.
  • Pour in stock and potatoes.
  • Bring to a boil, and reduce to a simmer.
  • Cook until potatoes are fork-tender.
  • Puree in food processor in batches.
  • Re-warm as needed. Serve with some yogurt swirled on top.
  • * If using a blender instead of food processor, make sure you peel the potatoes first and puree in small batches as this is very hot.

SMOKY EGGPLANT SOUP

I am a fan of eggplant soup, and this one is a winner, creamy-textured and bright tasting. Charring the eggplant gives it a smoky flavor, but as opposed to some rustic versions, the soup has a smooth texture and a lovely pale color. It gets a good squeeze of lemon juice, a drizzle of olive oil and a sprinkling of the Middle Eastern spice mixture za'atar, made with wild thyme and sesame, now widely available. Make sure to choose small, firm eggplants. Serve the soup chilled or hot, in small portions.

2 pounds small firm eggplants
5 tablespoons olive oil
2 cups sliced white or yellow onion
Salt and pepper
6 garlic cloves, minced
Pinch cayenne
6 cups chicken broth or mild vegetable broth

1/2 teaspoon lemon zest
1 tablespoon za'atar, available in Middle Eastern groceries
2 teaspoons chopped parsley

Steps:

  • Poke 2 or 3 holes in eggplants with a paring knife, then place on a baking sheet under hot broiler, about 2 inches from flame. Cook for 3 or 4 minutes, allowing skins to blacken and char. Turn and cook on other side until eggplants have softened completely, about 4 minutes more. Set aside to cool, then remove and discard skins and roughly chop eggplant flesh.
  • Meanwhile, put 3 tablespoons olive oil in a heavy-bottomed stainless or enameled soup pot over medium-high heat. Add onion, season generously with salt and pepper, and cook until softened and beginning to color, 5 to 7 minutes. Add garlic, cayenne and reserved eggplant and cook 1 minute more, then add broth and bring to a brisk simmer. Reduce heat and simmer gently for 10 minutes. Check seasoning of broth and adjust salt.
  • Purée soup in batches in blender. Strain through fine-meshed sieve and discard solid debris and seeds. Add 3 tablespoons lemon juice to puréed soup and taste again, adding more as necessary. Soup should be well seasoned and rather lemony.
  • Mix lemon zest with remaining 2 tablespoons olive oil for garnish. Ladle soup into small bowls, topping each bowl with 1 teaspoon lemon oil, 1/2 teaspoon za'atar and some chopped parsley. May be served hot or cold.

¼ cup finely chopped onion
6 cups chicken broth
¾ cup tomato puree

1 teaspoon Worcestershire sauce

Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 40 minutes.
  • Once cooked, carefully puree soup in batches in a blender or food processor until smooth. Return soup to the stove in a clean saucepan. Stir in half-and-half, season to taste with salt and pepper; cook over medium-low heat until hot.
