Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 large eggplant
1/2 cup Italian breadcrumbs
1/8-1/4 cup of grated parmesan cheese
1 (26 ounce) jar spaghetti sauce
2 eggs (beaten)
1 cup shredded mozzarella cheese
salt and pepper

Steps:

  • Slice eggplant into 1/4 inch slices.
  • Salt and pepper.
  • Dip in beaten egg.
  • Dredge in bread crumbs mixed with parmesan cheese.
  • Fry till golden brown.
  • Place in baking dish.
  • Pour spaghetti sauce over top.
  • Top with mozzarella cheese.
  • Bake at 350 for about 30 minutes.
  • Serve over angel hair pasta and with a salad.

Tips:

  • Choose the right eggplant: Look for eggplants that are firm and have smooth, shiny skin. Avoid eggplants that are bruised or have blemishes.
  • Slice the eggplant evenly: This will help the eggplant cook evenly. You can use a sharp knife or a mandoline to slice the eggplant.
  • Salt the eggplant slices: This will help to draw out the moisture from the eggplant and prevent it from becoming soggy.
  • Dredge the eggplant slices in flour: This will help the eggplant to brown and crispy when it is fried.
  • Fry the eggplant slices in hot oil: This will help the eggplant to cook quickly and evenly. Be careful not to overcrowd the pan, or the eggplant will not cook evenly.
  • Make sure the eggplant is cooked through before assembling the parmesan: You can check this by inserting a toothpick into the center of the eggplant slice. If the toothpick comes out clean, the eggplant is cooked through.
  • Use a good quality cheese: The cheese is one of the most important ingredients in eggplant parmesan, so it is important to use a good quality cheese that melts well. Parmesan cheese, mozzarella cheese, and ricotta cheese are all good options.
  • Layer the eggplant, cheese, and sauce in a baking dish: Start with a layer of eggplant, then top with a layer of cheese, and then a layer of sauce. Repeat this process until all of the ingredients have been used.
  • Bake the eggplant parmesan until it is golden brown and bubbly: This will usually take about 30 minutes.
  • Let the eggplant parmesan cool slightly before serving: This will help the cheese to set and make it easier to slice.

Conclusion:

Eggplant parmesan is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It is a great way to use up leftover eggplant, and it is also a good dish to make ahead of time. With a few simple tips, you can make eggplant parmesan that is sure to impress your family and friends.
