¼ cup olive oil
2 teaspoons za'atar (see Tips)
1 teaspoon lemon zest, plus 3 tablespoons lemon juice (from 1 lemon), divided
1 medium eggplant (about 1 pound), cut into 1/2-inch-thick slices
1 medium red bell pepper, stemmed, seeded and quartered lengthwise
½ medium red onion, peeled and cut into 1-inch wedges through the root
Cooking spray
1 cup halved cherry tomatoes
¾ cup coarsely chopped fresh flat-leaf parsley
¼ cup thinly sliced scallions
¼ cup coarsely chopped fresh mint
½ teaspoon salt

Steps:

  • Preheat a grill to medium-high.
  • Combine oil, za'atar and lemon zest in a small bowl. Brush 1 side of eggplant slices with half of the oil mixture; reserve the remaining mixture. Oil the grill rack (see Tips). Grill the eggplant, uncovered, turning often, until tender and grill marks appear on both sides, about 5 minutes total. Cut the eggplant into 1/4-inch pieces and transfer to a large bowl.
  • Coat bell pepper quarters and onion wedges with cooking spray. Grill, uncovered, until tender and charred, about 5 minutes. Chop the peppers into 3/4-inch pieces. Remove and discard onion stem. Add the peppers, onions, tomatoes, parsley, scallions and mint to the bowl with the eggplant.
  • Add lemon juice and salt to the reserved oil mixture; whisk to combine. Drizzle over the vegetables and toss to coat.

This was my first time boiling eggplant and it turned out very good! Boiling it with the garlic makes it extra special...we were eating it plain as it was cooling. I found this recipe to be very simple and tasty. We ate it with white rice.

1 large eggplant, unpeeled and cut into 1-inch cubes
3 garlic cloves, minced
5 cups water
salt, to taste
1 teaspoon ground cumin
1 teaspoon paprika (I used hot Hungarian)
1 -2 tablespoon fresh lemon juice
2 teaspoons olive oil

Steps:

  • Place eggplant, garlic, water and salt in a pot and bring to a boil.
  • Cover and cook over medium heat for 8-10 minutes, or until eggplant cubes are cooked but still firm.
  • Drain in a strainer and allow to cool.
  • Place cooled eggplant in a bowl and toss gently with the remaining ingredients.
  • Very nice served at room temperature.

1/2 cup fat-free mayonnaise
1 tablespoon minced onion
1 lb unpeeled eggplant, sliced-about 12 (1/2 inch slices)
1/3 cup fine dry breadcrumb
1/3 cup grated parmesan cheese (or parmesan alternative, like asiago)
1/2 teaspoon dried Italian seasoning
vegetable oil cooking spray

Steps:

  • Combine first 2 ingredients, stir well.
  • Spread evenly over both sides of eggplant slices.
  • Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumbs mixture.
  • Place eggplant on a baking sheet coated with cooking spray.
  • Bake@ 425 degrees for 12 minutes.
  • Turn eggplant over; and bake an additional 12 minutes or until golden.

1 plum tomato, diced
1 1/2 teaspoons red wine vinegar
1/2 teaspoon kosher salt, more to taste

1 lb eggplant (firm)
2 teaspoons salt
2 tablespoons olive oil, divided
1 large garlic clove, peeled
1/2 teaspoon salt
1/2 cup green pepper, diced
1 tablespoon fresh flat leaf parsley, chopped
2 tablespoons lime juice, freshly squeezed
2 tablespoons diced green chilies, canned, drained
2 small tomatoes, diced, seeded
pepper, to taste

Steps:

  • Peel eggplant and dice into 1/2 inch cubes.
