I found this McCormick recipe in a magazine. McCormick suggest dipping the truffles in two batches as the coldness of the truffles may cause the melted chocolate to harden. Cooking time is chill time.

Time 15m

Number Of Ingredients 7

1 lb white chocolate, divided

nutmeg for sprinkling on top

  • 5. After all truffles are dipped. Chill for 1 hour.

Tips:

  • Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 60% is a good option.
  • Make sure the cream is cold before whipping it. This will help it whip up quickly and smoothly.
  • Don't over-whip the cream. If you whip it too much, it will become grainy.
  • Grate the nutmeg finely. This will help it distribute evenly throughout the truffles.
  • Work quickly when rolling the truffles. The chocolate will start to melt if you take too long.
  • If you're having trouble rolling the truffles, chill them for a few minutes before trying again.
  • Store the truffles in the refrigerator for up to 2 weeks.
