Time 2h10m

Yield 6

Number Of Ingredients 10

2 cups vanilla almond milk
⅓ cup white sugar
2 tablespoons unsalted butter
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon salt
5 cups 1-inch cubes of day-old Brioche bread
3 large eggs
1 ¼ cups pitted and halved cherries
1 teaspoon cinnamon sugar, or as needed

Steps:

  • Combine milk, sugar, butter, vanilla, cinnamon, and salt in a small saucepan over low heat. Cook just until butter has melted and set aside to cool.
  • Grease an 8x8-inch baking dish or spray with cooking spray.
  • Add bread cubes to the baking dish. Whisk eggs into the butter mixture until well combined and pour over the bread cubes, pressing down a bit so bread cubes are submerged. Stir cherries into the bread cube mixture and distribute evenly. Let soak for 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Sprinkle cinnamon sugar over the bread pudding.
  • Bake until the top is golden brown and the custard is set in the center, about 65 minutes. Bread pudding will puff up but drop shortly after coming out of the oven, just like a souffle. Place on a baking rack and cool for 10 minutes. Serve warm or at room temperature.

Tips and Conclusion

Indulge in the delightful flavors of eggnog, dried cherries, and fluffy bread in this classic bread pudding recipe. Here are some valuable tips and a comprehensive conclusion to elevate your baking experience:

  • Selecting Quality Ingredients: Choose fresh, high-quality ingredients to ensure the best flavor and texture. Use real eggnog for a rich, creamy taste and plump, juicy dried cherries for a delightful burst of sweetness.
  • Balancing the Eggnog: Adjust the amount of eggnog based on your desired consistency. For a denser, moist bread pudding, use less eggnog. For a lighter, fluffier texture, use more eggnog.
  • Soaking the Bread Cubes: Properly soak the bread cubes in the eggnog mixture to allow them to absorb the flavors and soften. This will result in a tender, evenly-cooked bread pudding.
  • Adding Aromatics: Enhance the flavor profile of your bread pudding by incorporating warm spices like cinnamon, nutmeg, and ginger. These spices complement the eggnog and dried cherries perfectly.
  • Baking to Perfection: Bake the bread pudding in a preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean. Avoid overbaking, as this can dry out the bread pudding.
  • Serving Suggestions: Serve the bread pudding warm or at room temperature, topped with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat. You can also sprinkle some additional dried cherries or chopped nuts for a festive presentation.

In conclusion, eggnog dried cherry bread pudding is a delightful dessert that combines the nostalgic flavors of eggnog and dried cherries with the comforting texture of bread pudding. By following these tips and adhering to the recipe, you can create a memorable dessert that will impress your family and friends. Experiment with different spices and toppings to personalize the recipe and make it your own. Happy baking!
