1 cup packed light brown sugar or 1 cup dark brown sugar
1/2 cup heavy cream
1/4 cup dark corn syrup
2 tablespoons butter
1/2 teaspoon rum extract

  • MAKE THE PUDDING: Prheat oven to 375*F; grease a 13x9" baking pan (3 quarts).

3 c 2% or whole milk
2 c eggnog
1/2-2/3 c sugar, keep in mind the eggnog is full of sugar
7 eggs
2-3 tsp cinnamon, keep in mind the eggnog is full of spice
1 dash(es) nutmeg, optional
1 1/2 tsp vanilla extract
8 c 1 lb. loaf of French bread
2/3 c dried cranberries
3 Tbsp butter

Steps:

  • 1. Heat oven to 350 degrees. Butter the bottom and sides of a 13 x 9 casserole/baking pan. Set aside.
  • 2. Tear by hand or chop the French bread into 2 inch cubes. Evenly layer cubed bread on the bottom of the buttered pan.
  • 3. In a saucepan, over medium heat, warm milk, eggnog and butter along with cranberries. Set aside.
  • 4. In a large bowl mix sugar and cinnamon together. Add eggs, vanilla and stir.
  • 5. Slowly, while stirring, add the lukewarm milk mixture to the egg mixture. Set aside.
  • 6. Pour batter on top of bread. If using cranberries, you may spread them out at this time. Bake 45-50 min. The top should be golden. Enjoy!

CHERRY EGGNOG BREAD

This is so easy and very tasty. I make it all of the time for brunch. It is especially popular at christmas time. If you like cherries and eggnog, this recipe is no fail!

3/4 cup maraschino cherry, drained and chopped
2 1/4 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon nutmeg
3/4 teaspoon salt
1 cup sugar
3/4 cup butter, softened
3 eggs
1 cup eggnog
icing
1/2 cup powdered sugar
4 teaspoons eggnog
1/4 cup sliced almonds

Steps:

  • Preheat oven to 325 degrees.
  • Spray a loaf pan with non-stick cooking spray. Set aside.
  • You may combine dry ingredients and wet ingredients separately before incorporating, but I prefer to put them all in one bowl and mix together to save time.
  • Once well mixed, place batter in the loaf pan. Batter will be thick.
  • Bake for approximately 75 minutes, though time will vary with ovens.
  • After cooled, remove bread from loaf pan.
  • Mix together powdered sugar and eggnog. When smooth, drizzle over top of bread. Top with almonds. (Almonds can be toasted if desired.) Serve immediately. Bread is very good when served warm, but is not necessary.

3/4 cup sugar
2 tablespoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 large eggs, room temperature
2-1/2 cups eggnog
1/2 cup canola oil
1 tablespoon grated orange zest
1/4 cup orange juice
3/4 cup chopped dried apricots
3/4 cup chopped macadamia nuts
GLAZE:
3/4 cup confectioners' sugar
1 to 2 tablespoons eggnog

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 6 ingredients. In another bowl, whisk eggs, 2-1/2 cups eggnog, oil, orange zest and orange juice until blended. Add to flour mixture; stir just until moistened. Fold in apricots and macadamia nuts., Transfer to 2 greased 9-x5-in. loaf pans. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool completely., For glaze, in a small bowl, mix confectioners' sugar and enough eggnog to reach drizzling consistency. Spoon over loaves. Freeze option: Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature.

1/4 cup unsweetened applesauce
1/4 cup canola oil
1 cup golden raisins
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt and nutmeg. In a small bowl, whisk the egg, eggnog, applesauce and oil. Stir into dry ingredients just until moistened. 2 cups plus 1 tbsp. sugar
2 eggs
1/4 cup eggnog
2 cups plus 2 tbsp canned pumpkin
1 2/3 cups cake flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons pumpkin pie spice

Steps:

  • Cream butter and sugar until fluffy.
  • add eggs and blend well.
  • add EggNog and Pumpkin mix completely.
