EGGLESS MAYONNAISE

Eggless Mayonnaise image

This is a very old recipe for a Spanish/Portuguese condiment recently highlighted by David Leite, the founder of Leite's Culinaria, in his book, "The New Portuguese Table." David learned the recipe from Ilda Vinagre, a chef in Portugal (who, in turn, had learned it from a cook in Brazil). It is silkier and lighter than regular mayonnaise, tasting a bit like olive-oil-whipped cream. Great for those who cannot eat eggs and miss the mayo in their sandwiches!

Time 2m

Yield 1 cup, 16 serving(s)

Number Of Ingredients 7

1/3 cup whole milk, VERY cold
3/4 teaspoon fresh lemon juice
1 garlic clove, peeled (small)
1/8 teaspoon fresh ground white pepper
1/2 cup vegetable oil
1/4 cup olive oil
kosher salt

Steps:

  • Combine cold milk, lemon juice, garlic, and pepper in your blender. Blend on high for 30 seconds.
  • Combine oils. While blending on high speed, slowly pour in the oil a few drops at a time, and gradually increase this to a fine thread until the mixture thickens and resembles a soft mayonnaise. You may need more or less oil.
  • Season with salt to taste. The mayonnaise will last up to 1 week in the fridge. Servings: approximately 16 tablespoons.

Tips:

  • Choose the right ingredients: Use high-quality, fresh ingredients for the best results. Choose a mayonnaise that is made with olive oil or avocado oil for a healthier option, and make sure the vinegar or lemon juice is fresh and tangy.
  • Prepare your ingredients ahead of time: Make sure all of your ingredients are cold before you start making the mayonnaise. This will help the mayonnaise to emulsify properly and prevent it from breaking.
  • Use the right equipment: A food processor or blender is the best tool for making mayonnaise. A whisk can also be used, but it will take a bit longer.
  • Start slowly: When you're making mayonnaise, it's important to start slowly and add the oil in a thin stream. This will help the mayonnaise to emulsify properly and prevent it from breaking.
  • Be patient: Making mayonnaise takes a little bit of time and patience. Don't get discouraged if it doesn't come together right away. Just keep whisking or blending and it will eventually come together.

Conclusion:

Eggless mayonnaise is a delicious and versatile condiment that can be used in a variety of dishes. It's a great option for people who are allergic to eggs or who simply want to avoid them. With a little bit of practice, you can easily make your own eggless mayonnaise at home. So next time you're looking for a healthy and tasty condiment, give eggless mayonnaise a try!
