BACON AND EGG SALAD

Bacon and Egg Salad image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

6 slices bacon
6 hard-boiled large eggs, peeled and chopped
1/4 cup mayonnaise
1 tablespoon minced fresh chives
1 tablespoon stone-ground mustard
1 lemon, juiced
Kosher salt and freshly ground black pepper
1 ripe avocado, sliced, optional
1 Roma tomato, sliced, optional
4 croissants, lightly toasted, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • To cook the bacon using the "Mauro Method," line a baking sheet with parchment, overlapping each side 1 to 2 inches. Put the bacon on the parchment and bake until crisp and brown, about 20 minutes. This way, the fat will fry the bacon to a perfect crisp but not come in contact with the metal pan, creating a mess. Drain the bacon on paper towels and let cool. (Once the fat is cooled, use or just toss it. No mess!)
  • Crumble the bacon into a bowl. Gently mix in the eggs, mayonnaise, chives, mustard and lemon juice. Season with salt and pepper.
  • Eat alone, or build sandwiches with avocados and tomatoes on toasted croissants.

EGG SALAD SANDWICHES WITH GREEN OLIVE, CELERY AND PARSLEY

Egg Salad Sandwiches With Green Olive, Celery and Parsley image

This zesty egg salad has no mayonnaise (but a dab of homemade mayonnaise would be permissible). Use picholine or other tasty green olives (not the bland canned supermarket type) or substitute Italian-style marinated artichoke hearts. You could add a little chopped anchovy and a few capers, too, if so inclined. Served open-face as appetizers, these sandwiches are very pretty, but there's no reason not to use the filling for a conventional sandwich.

Categories     snack, finger foods, sandwiches, appetizer

Time 20m

Yield 12 open-face sandwiches

Number Of Ingredients 11

4 large eggs, boiled 9 minutes, chilled in ice water and peeled
1/4 cup thinly sliced scallions, cut on the diagonal
1/4 cup thinly sliced celery hearts, with leaves
Salt and pepper
1/2 cup roughly chopped green olives
Pinch of red-pepper flakes
1/2 cup roughly chopped flat-leaf parsley
2 to 3 tablespoons extra-virgin olive oil
6 slices challah bread
Unsalted butter, at room temperature
A handful of arugula leaves

Steps:

  • Chop eggs into large rough pieces and put in a medium bowl. Add scallions and celery and season with salt and pepper. Add olives, red pepper, parsley and olive oil. Toss to combine and mash lightly with a fork to amalgamate. (Combine just before serving to keep the mixture fresh looking.)
  • Lay bread slices on a work surface and butter each generously. Spread 2 or 3 tablespoons egg mixture on each. Top each slice with a few arugula leaves.
  • Cut each slice in half diagonally and serve. If desired, cut into bite-size pieces.

ROMAINE SALAD WITH BACON AND HARD-BOILED EGGS

Romaine Salad with Bacon and Hard-Boiled Eggs image

Categories     Salad     Egg     Leafy Green     Pork     Quick & Easy     Bacon     Winter     Boil     Gourmet

Yield Makes 4 first-course servings

Number Of Ingredients 7

2 large eggs
4 ounces bacon (4 to 5 slices), cut crosswise into 1/2-inch-wide strips
1 large head romaine (1 1/4 pound), trimmed and cut into bite-size pieces
2 tablespoons olive oil
1/4 cup finely chopped shallot
2 tablespoons red-wine vinegar
1/4 teaspoon salt, or to taste

Steps:

  • Hard-boil eggs:
  • Cover eggs with cold water by 1 inch in a small heavy saucepan and bring to a boil, partially covered with lid. Reduce heat to low and cook eggs, covered completely, 10 minutes. Transfer eggs with a slotted spoon to a bowl of cold water to stop cooking and let stand until cool enough to handle, about 2 minutes.
  • Make salad:
  • While eggs are simmering, cook bacon in a 10-inch heavy skillet over moderate heat, stirring, until crisp, about 8 minutes. Transfer bacon with a slotted spoon to paper towels to drain, leaving rendered fat in skillet.
  • Peel eggs and finely chop.
  • Put romaine and egg in a serving bowl.
  • Add oil and shallot to fat in skillet and cook over moderate heat, stirring, until shallot is softened, about 2 minutes. Add vinegar and salt and boil, swirling skillet, 10 seconds. Pour hot dressing over romaine and egg and toss to combine. Add bacon and toss salad, then season with salt and pepper.

Tips:

  • Opt for High-Quality Ingredients: Use fresh, high-quality ingredients for the best flavor and texture. Look for large, farm-fresh eggs, crispy bacon, flavorful olives, and crisp celery.
  • Chop Ingredients Evenly: Chop the bacon, celery, and olives into small pieces of uniform size. This ensures even distribution and enhances the overall texture of the salad.
  • Use High-Quality Mayonnaise: Choose a good-quality mayonnaise made with fresh, flavorful oil. Avoid using low-fat or non-fat mayonnaise, as it will compromise the richness and creaminess of the salad.
  • Season Wisely: Start with a small amount of salt and pepper, then adjust to taste. Over-seasoning can overpower the delicate flavors of the other ingredients.
  • Chill Before Serving: After assembling the salad, chill it for at least 30 minutes before serving. This allows the flavors to meld and the salad to firm up, resulting in a more cohesive and satisfying dish.

Conclusion:

With its combination of creamy richness, savory bacon, tangy olives, and crunchy celery, this egg salad with bacon and olives is a classic for a reason. Its versatility makes it suitable for various occasions and preferences. Whether you enjoy it as a quick and easy lunch, serve it as a hearty appetizer, or pack it for a satisfying picnic, this salad is sure to delight. Experiment with different types of olives, bacon, and herbs to create your unique variations and enjoy this timeless recipe for years to come!
