SPAM AND EGG SALAD/ SPREAD

Spam and Egg Salad/ Spread image

My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 7

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled
3/4 cup Miracle Whip (more or less to taste) or 3/4 cup mayonnaise (more or less to taste)
2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
salt and pepper

Steps:

  • Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.

Provided by Teresa Malkemus

Categories     Other Salads

Number Of Ingredients 5

12 hard boiled eggs
1/2 c miracle whip salad dressing
3/4 lb bacon, fried until crisp
1 c grated cheddar cheese
salt and pepper to taste

Steps:

  • 1. With a fork, mash up the boiled eggs in a bowl.
  • 2. Crumble bacon over eggs and add the miracle whip. Stir until well blended.
  • 3. Add the cheese and seasonings, stir well.
  • 4. Spread on bread, toast, or buns.

Tips:

  • For the best flavor, use hard-boiled eggs that have been freshly made. Older eggs will not have as much flavor.
  • If you don't have mayonnaise, you can use Greek yogurt or sour cream instead. However, the mayonnaise will give the egg salad a richer flavor.
  • Add some chopped celery, onion, or pickles to the egg salad for extra crunch and flavor.
  • If you like your egg salad spicy, add a pinch of cayenne pepper or paprika.
  • Serve the egg salad on bread, crackers, or lettuce leaves. You can also use it as a filling for sandwiches, wraps, or deviled eggs.

Conclusion:

Egg salad is a classic dish that is easy to make and can be enjoyed in many different ways. Whether you like it simple or dressed up with additional ingredients, egg salad is a delicious and versatile dish that is perfect for any occasion.
