OPEN-FACED EGG SALAD AND WATERCRESS SANDWICH
Entered for safe-keeping. Found this recipe from Saveur on the internet, and it looks like an excellent combination for tea-time sandwiches. (Or in my case, I'll wrap 2-slice sandwiches with plastic as is commonly done in Britain, and brown-bag my lunch for work.) From wikipedia: "Watercress contains significant amounts of iron, calcium and folic acid, in addition to vitamins A and C.... Many benefits from eating watercress are claimed, such as that it acts as a mild stimulant, a source of phytochemicals and antioxidants, a diuretic, an expectorant, and a digestive aid. It also appears to have cancer-suppressing properties. It is widely believed to help defend against lung cancer. In addition, watercress is a known inhibitor of the Cytochrome P450 CYP2E1, which may result in altered drug metabolism for individuals on certain medications (ex., chlorzoxazone)." Note that watercress has a shelf life of 2-3 days. For a more British version, use cress sprouts.

Steps:
- PREPARE HARD-COOKED EGGS THE FOOLPROOF WAY:.
- Place the eggs in a large pot. Cover with cold water. Set over medium heat and cover with a lid. When it starts to boil, remove from heat and set aside for 10 minutes. Dump the warm water, and refill the pot with cold water. Let sit for 5 minutes or so, dump and refill again with cold water.
- When cool to the touch, peel off the shells and roughly chop the eggs.
- PREPARE EGG SALAD:.
- In a large bowl, gently combine the eggs, chives, and salt and pepper to taste.
- Pour on the mayonnaise, vinegar, and mustard. Gently fold together.
- PREPARE SANDWICH:.
- Toast the bread. (Note: this is one sandwich in which the bread is commonly de-crusted and cut into special shapes for tea-time, or the prepared sandwich may be cut into triangles.).
- Construct the sandwich. Pile the watercress on a slice of the toasted bread, and dollop the egg salad on top.
EGG SALAD AND AVOCADO SANDWICHES
This twist on the classic comes together incredibly fast while the addition of avocado adds healthy fat and body to an already delicious sandwich. You can use any kind of bread you want, but my recipe calls for a buttery, flaky croissant - that way it can be served for lunch or at happy hour.

Steps:
- Soft-boil the eggs: Bring a large pot of water to a rolling boil. Gently lower each egg into the boiling water with a large spoon. Immediately set a timer for 6 minutes 30 seconds. Meanwhile, prepare a large bowl of ice water. When the timer goes off, drain the eggs and submerge them in the ice bath until cooled. Peel the eggs and transfer to a medium bowl.
- While the eggs cook, toast the croissants: Heat a large skillet over medium heat. Add the croissants split-side down in a single layer and cook until toasted, 2 to 3 minutes.
- Make the egg salad: Break the eggs into smaller pieces with a large spoon. Add the avocado, mayonnaise, chives, hot sauce, and smoked paprika and gently mix until combined.
- Assemble the sandwiches: Fill the croissants with the egg salad and enjoy!

Tips:
- Choose the freshest eggs possible: Fresh eggs will have a brighter yellow yolk and a thicker white, which will result in a more flavorful and creamy egg salad.
- Hard boil the eggs perfectly: To ensure that the eggs are cooked evenly and are easy to peel, place them in a single layer in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then cover the pan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be. Immediately transfer the eggs to an ice bath to stop the cooking process.
- Use high-quality mayonnaise: A good mayonnaise will make a big difference in the flavor of your egg salad. Look for a mayonnaise that is made with fresh, simple ingredients and has a creamy, rich texture.
- Add mix-ins to your liking: Feel free to get creative and add your favorite mix-ins to the egg salad. Some popular options include chopped celery, onion, pickles, bell pepper, and bacon. You can also add herbs, such as chives, parsley, or dill, for extra flavor.
- Serve the egg salad immediately or chill it for later: Egg salad is best served fresh, but you can also make it ahead of time and chill it in the refrigerator for up to 3 days. When you're ready to serve, let the egg salad come to room temperature for about 30 minutes before spreading it on bread or crackers.
Conclusion:
With its creamy texture, tangy flavor, and endless variations, egg salad is a classic sandwich filling that is perfect for any occasion. Whether you're packing a lunch for work or school, or you're hosting a party, egg salad is a surefire crowd-pleaser. So next time you're looking for a quick and easy meal, give this egg salad sandwich with avocado and watercress a try. You won't be disappointed!
