Time 15m

Yield 6 servings

Number Of Ingredients 6

12 eggs
1/4 cup heavy cream
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper
3 avocados, peeled, pitted and sliced
Chopped fresh chives, for garnish

Steps:

  • Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

EGGS AVOCADO

Eggs Avocado image

Fun to share with guests for breakfast, friends after the show, or anytime! Friendly, filling fare at any hour. Great with parmesan french bread. I like to add cream cheese and diced tomato to mine. A Betty Crocker recipe (1971)

Provided by SmHerndon

Categories     Breakfast

Time 15m

Yield 6 serving(s)

Number Of Ingredients 9

8 eggs
1/2 cup light cream
1 teaspoon salt
1/2 teaspoon pepper
1 avocado, peeled and cubed (about 1 Cup)
2 tablespoons butter
12 slices bacon, crispy fried & crumbled
cream cheese, thinly cubed (optional)
tomatoes (optional)

Steps:

  • Mix eggs, cream, salt & pepper with a fork; stir in avocado.
  • Heat butter in skillet over medium heat until just hot enough to sizzle a drop of water;.
  • Pour mixture into skillet. I personally like to add cream cheese at this time. As egg mixture begins to set at bottom and side, lift cooked portion with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook until eggs are thickened throughout but still moist.
  • Sprinkle tomato if desired.
  • Remove from heat and sprinkle bacon on servings.

Tips:

  • Choose ripe avocados: For the best flavor and texture, select avocados that are ripe but not overripe. They should be slightly soft when gently pressed.
  • Use fresh eggs: Fresh eggs will give you the best results. Look for eggs that are clean and free of cracks.
  • Be careful not to overcook the eggs: Overcooked eggs will become rubbery and tough. Cook them until they are just set, about 2-3 minutes.
  • Season to taste: Add salt, pepper, and other seasonings to taste. For a classic flavor, try adding a pinch of salt, a few grinds of black pepper, and a squeeze of lemon juice.
  • Garnish with your favorite toppings: Chopped cilantro, crumbled bacon, diced tomatoes, or a dollop of sour cream are all great options.

Conclusion:

Egg in avocado is a simple yet delicious dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to get your daily dose of protein and healthy fats.
