2 pounds green beans, trimmed
3 tablespoons unsalted butter
4 medium shallots, sliced
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Fill a large bowl with ice water; generously salt the water.
  • Add the green beans to the boiling water and cook until bright green and just tender, 4 to 6 minutes. Drain and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.

Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

1 medium sweet onion, thinly sliced; separate the rings
8 slice bacon fried; save drippings
1/2 c sliced almonds
6 Tbsp each of sugar and red wine vinegar

Steps:

  • 1. Stir sugar and vinegar into bacon drippings Meanwhile, layer in a 11x9 baking dish as follows: Beans, onion rings spread evenly, crumbled bacon and almonds

4 1/2 lbs fresh greens (collard, mustard, or turnip)
1 lb salt pork or 1 lb smoked pork shoulder
3 quarts water
1/4 teaspoon fresh ground black pepper

Steps:

  • Remove and discard stems and discolored spots from greens.
  • Wash greens thoroughly; drain and cut greens into strips.
  • Set aside.
  • Slice salt pork at 1/4-inch intervals, cutting to, but not through, the skin.
  • Combine salt pork, water, and pepper in a large Dutch oven; bring mixture to a boil.
