I pack away homegrown cucumbers every summer. This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. OLD FASHIONED SWEET NINE DAY PICKLES

Old Fashioned Sweet Nine Day Pickles image

Love these Sweet Pickles, one of the best sweet pickle recipes in my collection and one of the best I have ever tasted. This is one of those old old recipes shared by a lady that made really great pickles. Very easily made and not as time consuming as it sounds. While modern safety method requirements may call for processing I don't process my pickles as I find it changes the taste and texture, you may do so if you wish. As with many of the old recipes some things just do not enter well ... with this one it's you have to be making up enough of each of the brine solutions to completely cover! NOTE be sure to use non - reactive containers ( stainless steel - unchipped enamel/porcelain, assure all your plastic bowls and containers are food grade)

Tips:

  • Choose the right cucumbers: Use fresh, firm cucumbers that are about 2 inches in diameter and 6 inches long. English cucumbers are a good choice.
  • Prepare the cucumbers properly: Wash the cucumbers thoroughly and cut off the blossom ends. Cut the cucumbers into 1-inch thick slices. If you want smaller pickles, you can cut the slices in half.
  • Use a brine solution: The brine solution is what gives the pickles their sweet and sour flavor. Make sure to use the correct proportions of sugar, vinegar, and water. You can also add spices and herbs to the brine solution to give the pickles extra flavor.
  • Pack the pickles tightly in a jar: Pack the cucumber slices tightly into a clean glass jar. Make sure to leave about 1 inch of headspace at the top of the jar.
  • Cover the pickles with the brine solution: Pour the brine solution over the cucumber slices until they are completely covered. Make sure to use enough brine solution to cover the cucumbers completely.
  • Seal the jar and let the pickles ferment: Seal the jar tightly and let the pickles ferment for at least 2 weeks. You can store the pickles in a cool, dark place or in the refrigerator. The longer you let the pickles ferment, the more flavorful they will be.

Making sweet pickles at home is a fun and easy way to enjoy this classic treat. With just a few simple ingredients and a little bit of time, you can create a delicious batch of sweet pickles that will be enjoyed by everyone. So what are you waiting for? Give this recipe a try today!
