Indulge in a delightful culinary journey with this edamame pasta salad, a vibrant and flavorful dish that tantalizes the taste buds. This refreshing salad combines the best of both worlds, featuring tender edamame, colorful bell peppers, and hearty whole wheat pasta, all tossed in a luscious tahini dressing. With its appealing combination of textures and a burst of zesty flavors, this salad promises a satisfying and nutritious meal. Accompanying this main recipe are two additional variations that offer unique味覚: a tangy lemon-herb dressing and a creamy avocado dressing. These alternatives cater to diverse preferences and dietary needs, ensuring that every palate finds its match.
For the edamame pasta salad with tahini dressing, you'll embark on a culinary adventure that begins with boiling the whole wheat pasta until it reaches al dente perfection. While the pasta cooks, you'll prepare a symphony of flavors by whisking together tahini, lemon juice, garlic, cumin, salt, and pepper, creating a smooth and tangy dressing. Once the pasta is ready, it joins forces with blanched edamame, diced bell peppers, and chopped cilantro, forming a vibrant medley of colors and textures. The dressing gently coats each ingredient, bringing them together in a harmonious embrace.
In the second variation, the lemon-herb dressing takes center stage, offering a refreshing twist to the classic edamame pasta salad. A blend of lemon juice, olive oil, Dijon mustard, honey, garlic, thyme, and parsley creates a zesty and aromatic dressing that complements the salad's ingredients perfectly. This dressing adds a touch of brightness and herbaceousness, making it an ideal choice for those who prefer a lighter and tangier flavor profile.
The third variation introduces a creamy and indulgent avocado dressing, catering to those who crave a rich and satisfying salad experience. Featuring ripe avocados, creamy Greek yogurt, lemon juice, cilantro, garlic, cumin, and salt, this velvety dressing adds a luscious layer of flavor and texture to the salad. The avocado's natural creaminess beautifully complements the edamame, bell peppers, and pasta, creating a harmonious balance of flavors and textures.
No matter which dressing you choose, this edamame pasta salad promises a delightful and nutritious meal. Packed with protein, fiber, and an array of vitamins and minerals, this salad is a wholesome choice that nourishes the body and tantalizes the taste buds. A slightly different pasta salad, feel free to double it for potlucks and picnics. I particularly like to use Wacky Mac or tri-color pasta for this!

TAHINI-PARMESAN PASTA SALAD
Many traditional pasta salad recipes call for a heavy mayonnaise-based dressing, but this one combines tahini and Parmesan for a lighter, umami-packed dressing that can be used on noodles, salad greens, asparagus, grilled chicken or grains. Tahini and Parmesan may be a surprising duo, but they naturally work well together because tahini, which is made from sesame seeds, amplifies the cheese's rich, nutty flavor. To add even more complexity, cherry tomatoes are blistered in a skillet to concentrate their sweetness and acidity. As with any good pasta salad, this one benefits from adding fresh scallions and mint right before serving, plus toasted sesame seeds and shards of Parmesan.

Steps:
- Bring a large pot of salted water to a boil. When the water's boiling, add the pasta and cook according to package directions. Reserve 1 cup of pasta water, then drain.
- Meanwhile, in a large skillet, heat the olive oil over medium-high. Add the tomatoes, season with salt, and cook, shaking occasionally, until charred and wrinkly, 4 to 6 minutes. Transfer to a large bowl to cool.
- In a liquid measuring cup, stir together the tahini and grated Parmesan; season with salt and pepper. (Mixture will be thick.) When the pasta is drained, add 1/2 cup pasta water to the dressing and stir until smooth. Add the pasta to the bowl with the tomatoes, then stir in enough dressing to coat. (You won't use all of it just yet.) Let cool for 15 minutes or up to 3 hours at room temperature.
- When ready to eat, stir the rest of the dressing into the pasta. Stir in water (reserved pasta water or tap) as needed until the pasta is glossy and creamy. Stir in the mint, scallions, sesame seeds and chopped Parmesan, reserving a little for garnish if desired. Season to taste with salt, pepper and a drizzle of olive oil.

Steps:
- 1. Cook edamame according to package directions; drain and rinse with cold water.
- 2. For the dressing: place all ingredients in a jar with a tight fitting lid. Shake well.
- 3. In a large bowl toss edamame and pasta with remaining ingredients.
- 4. Add about 1/2 cup or so of the balsamic dressing and serve.
Tips:
- Use fresh edamame. Fresh edamame is available in the summer months. You can find it in the produce section of most grocery stores.
- Cook the edamame properly. Edamame should be cooked until it is bright green and tender. Overcooked edamame will be mushy.
- Make the dressing ahead of time. The dressing can be made up to 2 days in advance. Just store it in the refrigerator until you're ready to use it.
- Use a variety of vegetables. This recipe is a great way to use up leftover vegetables. Try adding chopped broccoli, cauliflower, or carrots.
- Add some protein. This salad is a great vegetarian option, but you can add some grilled chicken, tofu, or shrimp if you like.
Conclusion:
Edamame pasta salad with tahini dressing is a delicious and healthy summer dish. It's easy to make and can be tailored to your own preferences. So next time you're looking for a light and refreshing meal, give this recipe a try!
