4 large ripe bananas
2 large eggs, lightly beaten
One 15.25-ounce box spice cake mix

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on the longer sides.
  • Mash 3 of the bananas with a fork in a large bowl until very smooth, reserving the fourth and least-bruised banana for the bread topper. Whisk in the eggs and cake mix until just combined and no lumps remain.
  • Transfer to the prepared loaf pan, smoothing out the top with a small offset spatula. Slice the remaining banana in half lengthwise, then place the halves cut-side up on top of the batter, with the curves facing each other. Bake until deep golden brown and a toothpick inserted in the center comes out clean, about 50 minutes.

While looking for something entirely different, I found this recipe, entitled "5 Minutes/3 Bananas/1 Loaf of Goodness" Banana Bread. As I'd been looking for a good, simple banana bread recipe for some time, I decided to add this one to my recipes here, because it definately fits the bill. Personally, I add nuts, as they're a must in banana bread in this house, but add whatever you like best in yours.

Number Of Ingredients 9

1 3/4 cups all-purpose flour (can substitute part whole wheat flour)
2/3 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup margarine or 1/2 cup butter
3 bananas, mashed (about 1+ cup)
2 eggs, slightly beaten
1/2-1 cup chocolate chips (or whatever your heart, or taste buds, desire!) or 1/2-1 cup coconut (or whatever your heart, or taste buds, desire!)

Steps:

  • Preheat oven to 350 degrees. Grease and flour 9x5" loaf pan.
  • In large bowl, mix first 5 ingredients, then cut in the margerine or butter with a pastry blender until mixture resembles course crumbs (a potato masher works well for this, too)/ With fork stir in mashed bananas and beaten eggs, just until blended. Spread batter into a pan.
  • Bake 55 minutes to 1 hour until toothpick comes out clea. Cool for 10 minutes on a rack, then remove from pan.

1 2/3 cups all-purpose flour, plus more for pan
4 medium very ripe bananas (about 13 ounces), peeled and mashed
1/4 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup (packed) dark brown sugar
2 large eggs, at room temperature
1/2 cup chopped toasted walnuts
Special equipment:
A 9x5" loaf pan

Steps:

  • Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
  • Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
