¼ cup sun-dried tomatoes packed in oil, drained and diced

¾ cup dry white wine
½ cup milk
½ cup finely grated Parmesan cheese
½ teaspoon white sugar

Steps:

  • Prepare Idahoan Signature™ Russets Mashed Potatoes according to package directions.

4 boneless skinless chicken breast halves (about 1 1/2 pounds total)
1 cup all-purpose flour, for dredging
kosher salt
fresh ground black pepper
4 large eggs
1/4 cup extra virgin olive oil
1/2 lemon, thinly sliced into rounds
1/2 cup dry white wine, such as pinot grigio
1 cup chicken stock
1/2 lemon, juice of
2 tablespoons unsalted butter
1/4 cup chopped fresh flat-leaf parsley

  • Preheat oven to 200°F.
