Tips:

  • Choose ripe mandarins: Look for mandarins with bright orange skin and no blemishes. Ripe mandarins are sweeter and juicier.
  • Use fresh ginger and garlic: Fresh ginger and garlic add a lot of flavor to this dish. If you don't have fresh ginger or garlic, you can use ground ginger and garlic powder, but the flavor will be less intense.
  • Don't overcrowd the pan when cooking chicken: If you overcrowd the pan, the chicken will not cook evenly. Cook the chicken in batches if necessary.
  • Use a quality soy sauce: Soy sauce is a key ingredient in this dish, so it's important to use a good quality soy sauce. Look for a soy sauce that is made with naturally brewed soybeans and has a rich, flavorful taste.
  • Garnish with fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to this dish. If you don't have fresh cilantro, you can use parsley or green onions.
