Categories     Vegetable

Time 10m

Yield 3-4 serving(s)

Number Of Ingredients 6

2 avocados, ripe
2 tomatoes, vine-ripened
1 lime, juice of, bottled lime juice is also fine
4 tablespoons olive oil
salt & fresh ground pepper
1 garlic clove, very finely chopped

Steps:

  • Cut the tomatoes into large chunks, approximately 3/4" cubed.
  • Cut the avocados in half and remove the pit. Cut the avocado flesh into chunks around the same size as the tomato chunks; this can either be done by removing the avocado from the skin and chopping it or it can be done by cutting the avocado while still in the skin and turning the skin inside out.
  • Add olive oil, lime juice, and optional garlic, then salt and pepper to taste.

Tips:

  • Choose ripe, flavorful tomatoes: Look for tomatoes that are deep red and have a slight give when gently squeezed. Avoid tomatoes that are green or have blemishes.
  • Use a variety of tomatoes: For the best flavor, use a mix of different varieties of tomatoes, such as cherry tomatoes, Roma tomatoes, and beefsteak tomatoes.
  • Avocado should be ripe and creamy: Make sure the avocado is ripe and creamy, but not too soft. It should yield to gentle pressure.
  • Use fresh herbs: Fresh herbs, such as basil, cilantro, and parsley, add a lot of flavor to this salad. If you don't have fresh herbs on hand, you can use dried herbs, but use less, as they are more concentrated.
  • Don't overdress the salad: A little bit of dressing goes a long way in this salad. Overdressing will weigh it down and make it less flavorful.

Conclusion:

This easy tomato avocado salad is a refreshing and flavorful side dish that is perfect for summer gatherings. It is made with fresh, ripe tomatoes, creamy avocado, and a simple dressing. The salad can be easily customized to your liking by adding different herbs, vegetables, or cheeses. It is a healthy and delicious way to enjoy the bounty of the summer harvest.
