My family's favorite taco side-dish is Tex-Mex Rice. It's easy, fast and basically hands-free once I get it going. Makes the perfect counter for tacos, even during the cooking. LOL!

Number Of Ingredients 9

1-1/2 cups Uncle Bens Converted Rice
1 can Diced Tomatoes, chopped
1/4 cup Onion, finely chopped
1/2 small can, 4.5 oz. Green Chilies, chopped
1 cup or so Water
1/2 tsp Salt
1 T Olive Oil, or Butter
1 tsp Chili Powder
1/4 tsp Cumin Powder

Steps:

  • Chop Onion finely and set aside.
  • Heat Olive Oil (or Butter) in large skillet over low-medium heat, add chopped onion and rice. Stir occasionally.
  • Saute until rice is golden.
  • Place Diced Tomatoes and Green Chilies in food processor and chop. This should create approximately 2 cups Tomatoes and Chilies. Add water to make 3 cups total. Pour into skillet with rice. Add Salt, Chili Powder, and Cumin Powder.
  • Cover, reduce heat, and simmer for 20 minutes, or until all the liquid is absorbed and rice is tender.

2 tablespoons vegetable or canola oil
1 cup uncooked long-grain white rice
1 1/2 cups chicken stock or broth
8 oz. can tomato sauce
1 teaspoon chili powder
1 teaspoon garlic salt
1/2 teaspoon ground cumin

Steps:

  • Rinse the rice in a mesh strainer until water draining is clear. (This is optional, but it helps remove the starch and keep the cooked rice from being mushy.)
  • Heat the oil in a 4-quart saucepan over medium-high heat. Add the rice and cook until translucent (somewhat clear) about 3-4 minutes; stirring frequently.
  • Add the rest of the ingredients and bring to a rapid boil over high heat.
  • Stir once and cover. Turn the heat down to almost low (a little less than medium low) and cook for 25 minutes. Remove cover and let stand 2-3 minutes before fluffing with a fork.

1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn, thawed

2 cloves garlic, pressed
1/2 white onion, diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground turmeric
One 15-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
3 cups shredded rotisserie chicken
Two 8.8-ounce bags microwaveable white rice
1 1/2 cups grated pepper jack cheese
Fresh cilantro, for serving

Steps:

  • In a deep skillet, heat the olive oil over medium-high heat. When the oil is hot, add the garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until the onion is soft and the spices are toasted, about 3 minutes.
  • Pour in the tomato sauce, diced tomatoes and green chiles, chicken and both bags of rice. 3 tablespoons vegetable oil
2 cups long-grain rice
4 fresh serrano chiles, scored
4 cups vegetable stock
1 large onion, diced
1 large tomato, diced
1/2 bunch cilantro, whole leaves torn, plus more for garnish
1 large green bell pepper, seeded and deveined, diced
1 tablespoon cumin
2 teaspoons minced garlic
2 teaspoons salt
1 teaspoon freshly ground black pepper

Steps:

  • In a large skillet set over medium heat, heat the oil until shimmering, about 2 minutes. Add the rice and serranos, and cook, continually stirring, until lightly browned, taking care not to burn the rice, 10 to 15 minutes.
  • Add the stock (it will make a loud sizzling noise, so stand back a bit), the onion, tomato, cilantro, bell pepper, cumin, garlic, salt and pepper. Increase the heat to high and bring to a boil. Taste the juice with a spoon and season to your liking.
  • Reduce the heat to low, cover, and simmer for 15 minutes. (Do not uncover during cooking.) Remove the serranos and discard. Fluff and serve, garnished will a little more cilantro.
