1 can(s) chili beans, 14 oz
1 can(s) chopped green chilies, 4.5 oz
8 oz cream cheese (cubed)
8 oz shredded cheddar cheese
1 tsp chili powder (use either mild or hot)

Steps:

  • 1. Brown the ground beef in a skillet.
  • 2. Drain the fat and transfer a Crock Pot.
  • 3. Add all of the remaining ingredients. Cover and cook on LOW 1-4 hours or until cheese is melted. (Refer to personal note for further information).
  • 4. Switch to a warm setting and/or leave on LOW and serve with tortilla chips.

1 lb ground chuck
1 (1 1/4 ounce) package taco seasoning mix (I use Old El paso)
1 (10 ounce) jar medium salsa (I use Chi-Chi's brand)
1 lb Velveeta cheese, cubed
1 tablespoon sour cream
1/4 cup red onion, chopped
1 garlic clove, minced

Steps:

  • In skillet, brown ground chuck in oil and chop finely with a spatula. Add chopped onion and garlic and saute' just long enough to sweat but not brown. Drain.
  • Put meat mixture in crock pot and add all other ingredients. Stir and cover. Heat on "low" for 2-3 hours, stirring after the first hour.
  • Garnish with finely chopped green onion stems, if desired.
