EASY SWEET AND TANGY MACARONI SALAD

Easy Sweet and Tangy Macaroni Salad image

My family doesn't like macaroni salad with a lot of mayonnaise. I threw together this recipe one day when I couldn't find one I liked online. It was a huge hit with everyone helping themselves to seconds. I think this recipe would also be great with some hard boiled egg added. You could also try different vegetables such as celery or green pepper according to your taste. The result is a sweet and tangy, not overly creamy or mayonnaise tasting macaroni salad. Great with grilled food!

A sweet out-of-the-ordinary dressing makes this macaroni salad special. My aunt gave me the recipe and it has become one of my favorites. I occasionally leave out the green pepper if I know that people don't like it, and it still tastes great. -Idalee Scholz, Cocoa Beach, Florida

Tips:

  • Use high-quality macaroni: Look for a brand that is made with durum wheat semolina and has a firm texture.
  • Cook the macaroni al dente: This means that it should be cooked until it is just tender but still has a slight bite to it.
  • Rinse the macaroni with cold water: This will help to stop the cooking process and prevent the macaroni from becoming mushy.
  • Use a variety of vegetables: This will add color, flavor, and texture to the salad.
  • Chop the vegetables into small pieces: This will help them to evenly distribute throughout the salad.
  • Use a flavorful dressing: The dressing is what will really bring the salad together. Be sure to use a dressing that has a good balance of sweet, tangy, and creamy flavors.
  • Chill the salad before serving: This will help the flavors to meld and the salad to become more refreshing.

Conclusion:

Macaroni salad is a classic summer side dish that is always a hit at potlucks and picnics. It is easy to make and can be customized to your liking. With a variety of vegetables, a flavorful dressing, and a little bit of time, you can create a macaroni salad that everyone will love.
