Steps:
- 1. Brown ground beef with minced garlic, cumin and onion. Drain.
- 2. Add all other ingredients. (Don't drain any of the canned ingredients). May wish to add 2 or 3 cans full of water.
- 3. Heat through, and serve with shredded cheddar cheese and cornbread! SO DELICIOUS! :)
- 4. Note: My family likes extra pasta, so I add 1-1/2 cups medium-sized pasta shells to this soup and boil until pasta is tender (about 10 minutes or longer). If you add pasta shells to this soup, you'll need to add extra water.
- 5. Great tasting soup, immediately after heating through. But, even more delicious on the second day! :)
Tips:
- Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and prevent any mishaps.
- Use Fresh Ingredients: Fresh ingredients will give your soup the best flavor. If possible, buy your ingredients from a local farmer's market or grocery store.
- Don't Overcrowd the Pot: When adding ingredients to the pot, don't overcrowd it. This will prevent the ingredients from cooking evenly.
- Season to Taste: Season your soup to taste with salt and pepper. You can also add other spices, such as chili powder, cumin, or paprika, to taste.
- Let the Soup Simmer: After you've added all of the ingredients, let the soup simmer for at least 30 minutes. This will allow the flavors to meld together.
- Serve with Toppings: Serve the soup with your favorite toppings, such as sour cream, shredded cheese, or tortilla chips.
Conclusion:
This easy southwest soup is a delicious and hearty meal that is perfect for a cold night. It's also a great way to use up leftover chicken or turkey. With its simple ingredients and easy-to-follow instructions, this soup is sure to become a family favorite.
