1 garlic clove, minced
2 (14 1/2 ounce) cans diced tomatoes
4 ounces diced green chilies, chopped
2 large onions, quartered and sliced
3 tablespoons chopped fresh parsley
2 teaspoons chili powder
1 teaspoon dried oregano
2 teaspoons sugar
salt and pepper

Steps:

  • Season chops on both sides with garlic powder, salt and pepper.
  • In a large skillet heat olive oil and butter. Brown chops on both sides.
  • Remove chops and pour off all but 1 to 2 tablespoons of fat. Stir in flour, breaking up browned bits.

Tips:

  • Choose the right pork chops: Look for bone-in pork chops that are at least 1 inch thick. This will help them stay juicy during cooking.
  • Season the pork chops well: Don't be afraid to use a generous amount of salt and pepper. You can also add other spices, such as garlic powder, onion powder, or chili powder.
  • Cook the pork chops over medium heat: This will help them cook evenly without burning.
  • Don't overcrowd the pan: If you're cooking multiple pork chops, make sure to give them enough space in the pan so that they can cook evenly.
  • Use a meat thermometer: The best way to ensure that the pork chops are cooked through is to use a meat thermometer. Pork chops are safe to eat when they reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork chops rest before serving: This will help the juices redistribute throughout the meat, making them more tender and flavorful.
