SKILLET MACARONI AND CHEESE

Skillet Macaroni and Cheese image

I have another version of Skillet Macaroni and Cheese posted, but this one is different with the cheeses it includes and several other ingredients. In addition, it adds a bit of heat with the hot sauce. This recipe calls for homemade bread crumbs. To make them, pulse 2 slices of hearty white sandwich bread in a food processor until coarsely ground. The recipe is from Cook's Country.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

2 tablespoons unsalted butter
2 cups fresh breadcrumbs
salt
pepper
3 3/4 cups water, plus more as needed
1 (12 ounce) can evaporated milk
3 cups elbow macaroni
1 teaspoon cornstarch
2 teaspoons hot sauce
3 cups sharp cheddar cheese, shredded
2 cups monterey jack cheese, shredded

Steps:

  • Melt butter in large nonstick skillet over medium-high heat.
  • Add bread crumbs, 1/4 t salt, and 1/4 t pepper and cook, stirring frequently, until deep golden brown, about 5 minutes.
  • Transfer to bowl and wipe out skillet.
  • Bring water, 1 1/4 cups evaporated milk, and 1/2 t salt to simmer in skillet over medium-high heat.
  • Add macaroni and cook, stirring often, until macaroni is al dente, 8-10 minutes.
  • Whisk remaining evaporated milk, cornstarch, and hot sauce in small bowl, then stir into skillet.
  • Simmer until slightly thickened, about 1 minute.
  • Off heat, stir in cheeses, one handful at a time, adding water as needed to adjust consistency.
  • Sprinkle with toasted bread crumbs.
  • Serve.

Tips

  • Use a variety of cheeses: Feel free to mix and match different types of cheeses to create a unique flavor. Some good options include cheddar, mozzarella, Parmesan, and pepper Jack.
  • Don't skimp on the spices: Chili macaroni is a great way to use up leftover chili, but you can also make a fresh batch just for this recipe. Be sure to season the chili well with spices like chili powder, cumin, and paprika.
  • Add some heat: If you like spicy food, feel free to add a pinch of cayenne pepper or red pepper flakes to the chili. You can also top the finished dish with hot sauce.
  • Use a large skillet: This recipe makes a lot of food, so be sure to use a large skillet that can accommodate all of the ingredients.
  • Cook the macaroni al dente: You don't want the macaroni to be too soft, so be sure to cook it al dente (slightly firm to the bite).
  • Don't overcook the chili: The chili should be heated through, but you don't want to overcook it or it will lose its flavor.
  • Let the dish rest: After you've combined all of the ingredients, let the dish rest for a few minutes before serving. This will allow the flavors to meld together.

Conclusion

Skillet cheese-topped chili macaroni is a delicious and easy-to-make dish that's perfect for a weeknight dinner. It's also a great way to use up leftover chili. With a few simple ingredients, you can have a hearty and flavorful meal on the table in no time.
