1 lb mushrooms (baby bella's, cremini or button mushrooms)
1 medium or 2 small onions
3 Tbsp olive oil
3 Tbsp sour cream
Salt and Pepper to taste
Chopped green onion (optional for garnish)

Steps:

  • Finely chop your onions. Cut mushrooms into 1/4" thick slices.
  • In a medium, non-stick pan, saute onions in 1-2 Tbsp olive oil for a few min or until golden
  • In a separate, large pan, sauté sliced mushrooms in 1-2 Tbsp olive oil until soft. Drain off excess juice if needed; leaving behind a small amount of juice.
  • Combine mushrooms and onions. Add in 3 Tbsp sour cream and sprinkle with salt and pepper to taste.

1 cup medium pearl barley
1 small onion, chopped
1/4 cup butter
1-1/2 cups sliced fresh mushrooms
1 cup slivered almonds, toasted
1 envelope onion soup mix
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
3 to 3-1/2 cups chicken broth

Steps:

  • In a small skillet, saute barley and onion in butter for 5 minutes or until onion is tender. Transfer to an ungreased 2-qt. baking dish. Stir in the mushrooms, almonds, soup mix and parsley. Add 3 cups broth. , Bake, uncovered, at 350° for 1-1/4 hours or until barley is tender, adding more broth if needed.

2 tablespoons olive oil
1/4 cup seasoned bread crumbs
1/4 teaspoon garlic powder

2 1/2 lbs fresh mushrooms, sliced
1/4 cup butter
1 tablespoon parsley, chopped
1/2 teaspoon salt
4 tablespoons flour
1 cup sour cream
1/2 small lemon, juice of
4 tablespoons butter
breadcrumbs
1/2 cup parmesan cheese, grated
paprika

Steps:

  • Saute mushrooms in 1/4 cup butter for 2-3 minutes.
  • Add salt, parsley and flour.
  • Cover and cook over low heat for 10 minutes.
  • Remove mixture from heat and add lemon juice and sour cream.
  • Pour into a caserole dish sprayed with cooking spray.
  • Melt 4 tbsp butter and stir into bread crumbs (enough to cover casserole dish).
  • Spoon buttered bread crumbs over mushroom mixture.
  • At this point, you can cover and refrigerate overnight to be made the next day.
  • Before baking, sprinkle top with parmesan cheese.
  • Bake for 30 minutes at 350 degrees.
  • Sprinkle with paprika (optional) before serving.
