Categories     Dessert

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 6

2 cups sugar
1/4 cup flour
5 -6 cups chopped rhubarb
1 package yellow cake mix
3/4 cup butter, melted
chopped nuts, if desired

Steps:

  • Mix flour and sugar together, add rhubarb, tossing well.
  • Place in a 9" x 13" baking dish.
  • Sprinkle dry cake mix and chopped nuts, if using, over rhubarb mixture.
  • Drizzle melted butter over all.
  • Bake at 350 degrees F for 50- 60 minutes.
  • Serve warm topped with vanilla ice cream, if desired.

Tips:

  • Choose the right rhubarb: Look for stalks that are firm and brightly colored, with minimal blemishes. Avoid stalks that are limp or have brown spots.
  • Prep the rhubarb properly: Rinse the rhubarb stalks thoroughly and cut them into small pieces. If the rhubarb is particularly tart, you can sprinkle it with sugar and let it sit for a few minutes before adding it to the crisp.
  • Use a variety of spices: In addition to the cinnamon and nutmeg called for in this recipe, you can also add other spices like ginger, cardamom, or cloves.
  • Don't overmix the topping: The topping should be crumbly, so be careful not to overmix it. If you overmix it, the topping will be tough and dense.
  • Bake until the topping is golden brown: The crisp is done baking when the topping is golden brown and the filling is bubbling.

Conclusion:

Rhubarb crisp is a classic dessert that is easy to make and always a crowd-pleaser. With its sweet and tart filling and crispy topping, it's the perfect way to enjoy fresh rhubarb. So next time you're looking for a simple but delicious dessert, give rhubarb crisp a try. You won't be disappointed!
