From a neighbor, very simple and great rhubarb pudding bottom. Reminds me of a pineapple upside-down cake. I'm not a big fan of rhubarb but this is excellent and easy.

EASY RHUBARB CAKE

Easy Rhubarb Cake image

This recipe was given to me by my friend and co-worker, Trish. It is a moist and delicious cake. Can also substitute any other fruit for the rhubarb. *The brand name cake mix, eggs, water & oil listed are just a suggestion that was required to analyze the nutritional values. Any brand yellow cake mix will work as well, just be sure and follow the directions on that box for mixing their specific amounts and ingredients of eggs, water, oil or butter instead of what I have listed.*

Time 1h10m

Yield 1 cake

Number Of Ingredients 7

1 (1 lb) box Betty Crocker Super Moist yellow cake mix
3 eggs
1 1/4 cups water
1/3 cup vegetable oil
3 cups chopped rhubarb
1 cup sugar
2 cups heavy cream

Steps:

  • Preheat oven to 350 degrees.
  • Mix the cake mix, eggs, water & oil together as directed on cake mix box.
  • Pour into deep 9X13 pan.
  • Top with the rhubarb.
  • Sprinkle the sugar over the top of rhubarb.
  • Pour the heavy cream over the top of entire mixture.
  • Place the pan on a cookie sheet or foil to protect your oven (batter might spill over if the pan is not deep enough).
  • Bake @ 350 degrees for 45-60 minutes or until the top is a golden brown.
  • Top with whipped cream to serve (optional).
  • Enjoy!

Tips:

  • Choose the right rhubarb: Select firm, bright red stalks with minimal blemishes and bruises. Avoid stalks that are limp or have brown spots.
  • Prepare the rhubarb properly: Rinse the rhubarb stalks thoroughly and remove any leaves or blemishes. Cut the rhubarb into 1-inch pieces.
  • Don't overcook the rhubarb: Rhubarb is a delicate fruit and can easily become mushy if overcooked. Cook it just until it is tender-crisp, about 5-7 minutes.
  • Use fresh lemon juice: Fresh lemon juice adds a bright, tart flavor to the cake. Avoid using bottled lemon juice, as it can have a bitter taste.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense cake. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: Preheat the oven to the desired temperature before baking the cake. This helps ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting: Allow the cake to cool completely before frosting it. This helps prevent the frosting from melting.

Conclusion:

This easy rhubarb cake is a delicious and versatile dessert that can be enjoyed for breakfast, lunch, or dinner. With its simple ingredients and easy-to-follow instructions, this cake is a great option for beginner bakers or those short on time. The combination of tart rhubarb and sweet vanilla cake is sure to please everyone at the table. Whether you serve it plain or with a dollop of whipped cream or ice cream, this cake is sure to be a hit.
