1 cup margarine
1 ½ cups water
½ teaspoon salt
¼ cup white sugar
3 (.25 ounce) packages active dry yeast
¼ cup white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 eggs, beaten
6 cups self-rising flour

Steps:

  • In a small saucepan, heat margarine and water over low heat. When margarine has melted, remove pan from heat and stir in salt and 1/4 cup sugar.
  • In a small bowl, dissolve yeast and 1/4 cup sugar in 1 cup warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine yeast mixture and margarine mixture. Stir in beaten eggs and 2 cups self-rising flour. Beat in remaining flour 1 cup at a time, mixing well after each addition, until a stiff dough is formed. Divide dough into two pieces and place each piece in a well oiled freezer bag. Refrigerate for at least 24 hours.
  • Remove dough from refrigerator. Pull off pieces of dough and form into 2 inch diameter balls. Place in lightly oiled baking pans so that edges of balls are just touching. Cover and let rise in a warm place until doubled in volume, about 2 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Bake dough balls 15 minutes, until golden brown.

Number Of Ingredients 7

3 pkg active dry yeast
3 c Warm water
3/4 c sugar
6 Tbsp butter, melted
2-l/4 tsp salt
2 eggs, beaten
9 3/4 c flour

Steps:

  • 1. Sprinkle yeast over warm water in large bowl. Stir until dissolved. Blend in next 4 ingredients & mix well. Add one-half flour. Beat for 2 minutes. Add remaining flour & mix well. Shape into ball & place in well greased large bowl. Turn to coat. Cover & let rise until double, about 1-1/2 to 2 hrs depending on room temp. Punch down, pull edges to center & turn over. Again coat lightly with oil. Cover well & refrigerate at least 2 hours but can be kept several days. Remove & shape into rolls & place in well greased baking pan. Let rise until double about 1-1/2 - 2 hrs. Bake 375 degrees approx 20 min or until lightly browned. Makes 4-1/2 doz. rolls. Just bake a few at a time as needed.

Tips:

  • Use active dry yeast that is not expired. Old yeast may not activate properly and can result in dense or flat rolls.
  • Warm the milk to 105-115°F (41-46°C) before adding the yeast. This will help the yeast activate and grow.
  • Add the sugar to the milk along with the yeast. Sugar provides food for the yeast, helping it to grow and produce carbon dioxide, which gives the rolls their rise.
  • Let the yeast mixture sit for 5-10 minutes, or until it becomes foamy. This is a sign that the yeast is active and ready to use.
  • Add the yeast mixture, melted butter, eggs, and salt to the flour. Mix until the dough comes together and forms a ball.
  • Knead the dough on a lightly floured surface for 8-10 minutes, or until it is smooth and elastic. This will help develop the gluten in the flour, which gives the rolls their structure.
  • Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1-2 hours, or until it has doubled in size.
  • Punch down the dough and divide it into 12 equal pieces. Shape each piece into a roll and place them in a greased 9x13 inch baking pan.
  • Cover the rolls with plastic wrap and let them rise for 30 minutes, or until they have doubled in size.
  • Bake the rolls in a preheated 375°F (190°C) oven for 20-25 minutes, or until they are golden brown.

Conclusion:

These easy refrigerator yeast rolls are the perfect side dish for any meal. They are soft, fluffy, and delicious. Plus, they are easy to make and can be prepared ahead of time. Simply follow the tips above and you will be sure to have success.
