1 cup milk
1 cup light brown sugar
2 tablespoons light corn syrup
1 pinch salt
1 ¾ cups pecan halves

Steps:

  • Butter some waxed paper and lay on a flat surface or cookies sheet. In a 2 1/2 quart microwave dish, stir together sugar, butter, milk, brown sugar, corn syrup, and salt. Microwave on high, 4 minutes. Stir. Microwave another 4 minutes. Stir in pecans, and drop by tablespoons onto buttered paper. Let cool.

This recipe came from Roma Jean. I had never tried to make pralines until now and these are so yummy. I was part of a ladies day workshop at my church and I made 9 different desserts. This was a favorite! And I brought my microwave to the classroom and made them on site.

2 cups brown sugar
1 cup half-and-half
2 tablespoons Karo syrup
2 cups pecans, chopped

Steps:

  • Mix brown sugar, half & half and Karo Syrup in mirowave safe bowl.
  • (Microwave 12 or 13 minutes).
  • Add 2 Tablespoons of Butter.
  • Stir and Stir and Stir and Stir...... until it starts thickening.
  • Add 2 cups chopped pecans and stir.
  • Drop in spoonfuls onto wax paper. Allow to cool.

Pralines are delicious and always were something I liked to eat. I never made them because the recipes were too complicated. This changed when I got this from "Cooking New Orleans Style". Now I make and eat them and don't have to wait for DH to go to Louisianna on a business trip.

1 (1 1/4 ounce) package vanilla pudding mix, not instant
1 cup white sugar
1/2 cup dark brown sugar
1/2 cup evaporated milk
1 tablespoon butter
1 -2 cup pecan halves

Steps:

  • Combine first 5 ingredients in a medium sized saucepan.
  • Cook over medium low heat stirring and bring to a rolling boil.
  • Cook slowly over low heat for 3-5 minutes.
  • Remove from heat and stir in pecan halves.
  • Beat until thickened.
  • I use a wooden spoon.
  • If the mixture gets too thick while beating add drops of evaporated milk.
  • If the mixture is too thin just beat a little longer.
  • Drop by spoonfuls onto waxed papeeer.
  • Let cool.
  • Wrap each praline in plastic wrap.

1 lb. butter
1 1/3 cup sugar
1 1/3 cup finely chopped walnuts or pecans

Steps:

  • 1. Preheat oven 350 degrees. Break the graham crackers into 4 as they are scored. Place close together on 2 average sized cookie sheets with 1/2 inch lip. Don't keep them intact like they come because the sauce needs to ooze between them but still put the crackers real close together on the sheet. In saucepan, stirring constantly, heat to boiling the butter and the sugar on medium to low heat. Boil 2 minutes. Pour evenly over graham crackers. Using spatula, lightly smooth the sauce. Sprinkle with chopped nuts. Bake 10 minutes.
