1 cup polenta
salt to taste
1 cup mashed butternut squash
½ cup sour cream
½ cup grated Cheddar cheese

Steps:

4 cups water
2 teaspoons salt
1/2 teaspoon freshly grated or ground nutmeg
1 cup fine grain polenta
1 cup freshly grated Parmesan
Freshly ground coarse black pepper
2 tablespoons minced fresh thyme leaves

Steps:

  • In a heavy saucepan, bring the water to a boil over high heat. Add 2 teaspoons salt and the nutmeg and reduce the heat to the medium. Add the polenta gradually, whisking constantly. Continue to whisk for 5 minutes as the mixture bubbles. Reduce the heat to low and cook, stirring occasionally, until the mixture begins to come away from the sides of the pan, about 10 minutes. Add 1/2 cup of the Parmesan cheese, 1 teaspoon thyme and 1/2 teaspoon pepper and stir to combine thoroughly.
  • Invert a rimmed baking sheet on a countertop and cover the surface with parchment paper. Spread the polenta out with a spatula into a smooth, even layer. Cover the polenta with another sheet of parchment paper. Place another baking sheet, right side up, on top of the parchment. With 2 hands, press down evenly on the top baking sheet until the polenta is 1/4 inch thick. The idea is to sandwich the polenta between 2 flat surfaces. Refrigerate for at least 1 hour or up to overnight.
  • Preheat the oven to 375 degrees F. Invert the baking sheets together. Remove the top baking sheet and the top layer of parchment paper. The smoother side of the polenta will be facing up. Cut the polenta into triangle about 2 inches long by 1 1/2 inches wide. Transfer the triangles to 1 or more baking sheets, spacing them 1/2-inch apart. Sprinkle about 1/2 cup of the remaining Parmesan cheese and the remaining thyme on top of triangles.
  • Bake the crostini until hot throughout and starting to brown, about 10 to 12 minutes. Turn the oven to broil and broil the crostini about 8 inches from the heat source until crispy and golden brown on top, about 3 minutes. Serve warm or at room temperature.

4 polenta, slices sliced 1/2 inch thick
2 teaspoons olive oil, for brushing
4 anchovy fillets, in olive oil- roughly chopped
8 oil-cured black olives, roughly sliced
1 sprig rosemary
4 tablespoons pizza sauce
2 teaspoons locatelli cheese

Steps:

  • Heat oven to 450 degrees.
  • Slice 4 slices of Polenta 1/2 inch thick.
  • Brush both sides with olive oil and place on baking sheet.
  • Add 1 tbsp pizza sauce to each slice.
  • Evenly distribute rosemary, over polenta slices.
  • Evenly distribute anchovies and olives.

This is such a quick and easy recipe and kids of all ages love it. You can change the ingredients in order to please all of your pizza loving bunch. I have experimented with this recipe for several years now and it is always a favorite at church dinners, family reunions and anywhere there are teenagers and kids.

2 (16 1/3 ounce) packages Pillsbury Grands refrigerated buttermilk biscuits (the cheese ones are especially good)
3 cups spaghetti sauce
4 cups shredded mozzarella cheese (can use less)
2 cups meat (beef, sausage, ham or pepperoni)
2 cups of diced vegetables (onion, pepper, mushrooms, black olives, pineapple, etc.)

Steps:

  • Use a large baking dish (13 X 9 is too small). Lightly coat dish with cooking spray. Taking biscuits, cut them into sections of about 1 inch (I cut mine 3 strips across, then 3 strips down to make 9 pieces per biscuit) Once these are in "cubes", scatter them in the bottom of the prepared baking dish.
  • In a large bowl, combine your spaghetti sauce, seasoning, meat and vegetables and mix well. (This is where your creativity comes in -- how many combinations can there be? You can mix and match meats and veggies as well as use different types of sauce. The combinations are endless.) Pour this mixture over the biscuits, then top with cheese.
  • Bake @ 300 degrees until done (approximately 30-40 minutes depending on your oven). Make SURE your biscuit cubes have room to spread out and bake thoroughly -- this is why you use a larger pan.

2 packages (17 ounces each) Hawaiian sweet rolls
4 cups shredded cheddar cheese, divided
2 pounds ground beef
1 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
3/4 teaspoon pepper
24 bacon strips, cooked and crumbled
GLAZE:
1 cup butter, cubed
1/4 cup packed brown sugar
4 teaspoons Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 350°. Without separating rolls, cut each package of rolls horizontally in half; arrange bottom halves in 2 greased 13x9-in. baking pans. Sprinkle each pan of rolls with 1 cup cheese. Bake until cheese is melted, 3-5 minutes., In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, breaking beef into crumbles, 6-8 minutes; drain. Stir in tomatoes, mustard, Worcestershire sauce, salt and pepper. Cook and stir until combined, 1-2 minutes., Spoon beef mixture evenly over rolls; sprinkle with remaining cheese. Top with bacon. Replace tops. For glaze, in a microwave-safe bowl, combine butter, brown sugar, Worcestershire sauce and mustard. Microwave, covered, on high until butter is melted, stirring occasionally. Pour over rolls; sprinkle with sesame seeds. Bake, uncovered, until golden brown and heated through, 20-25 minutes. Freeze option: Cover and freeze unbaked sandwiches; prepare and freeze glaze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Pour glaze over buns and sprinkle with sesame seeds. Bake sandwiches as directed, increasing time by 10-15 minutes, until cheese is melted and a thermometer inserted in center reads 165°.
