  • Add enough water to just come to the edge of the foil without spilling onto the fish (approx 1/3 cup).
  • On top of the fish sprinkle all ingredients.
  • Cover with lid or tin foil.
  • Cook for 12-20 min's.
  • For RARE fish, cook just until white liquid emerges from fish (this is the cooked fish oil).
  • It will be pinky white on the outside and peachy pink inside.
  • For more well done fish, cook until fish is a pinky white color all the way through.
  • Place on a platter to serve.
  • Leave onions, capers and dill on the fish.
  • Slice lemons on the side for those who like fresh lemon juice.

SALMON:
1 Tbsp olive oil
4 medium (6 oz. each) salmon fillets
4 Tbsp freshly squeezed lime juice
salt and pepper to taste
4 Tbsp chardonnay
1 dash(es) dry mustard
heavy-duty foil
PIQUANT DILL SAUCE:
1 Tbsp butter
1 small leek, white part only, washed, finely chopped
1 medium shallot,minced
1 small jalapeño chili, seeds and membrane removed, finely diced
2 clove garlic, minced
1 c chicken stock
1 1/2 c lightly packed fresh dill, stems removed before measuring
2 Tbsp fresh lemon juice
1/4 tsp salt
1/2 tsp ground black pepper
3 Tbsp dairy sour cream

Steps:

  • 1. Salmon: Cut 2 big pieces of foil. Spray the shiny side with non stick spray. Place 2 pieces of fish side by side in foil and fold up outer edges. --- Combine remaining ingredients in a measuring cup and drizzle evenly over fish.
  • 2. Fold and pinch foil tightly all around to create a water tight seal around package. (I usually wrap with second piece of foil) Place fish packets on top rack of dishwasher. Set dishwasher on "normal cycle" setting. This takes about 50-55 minutes. When cycle is complete, take salmon out, discard foil, place on individual plates and spoon a generous spoonful of dill sauce on top.
  • 3. Make while fish is "washing": Sauce: Melt butter over medium heat in a skillet; add the next 4 ingredients and sauté for 5 minutes ,until vegetables are soft but not browned. Reduce heat to medium low and add chicken stock; Simmer , uncovered for 15 minutes;reducing to 1/2.
  • 4. Remove from heat and let cool. Transfer to blender and add remaining ingredients, except sour cream. Puree until smooth. Reserve and reheat before serving. Stir in sour cream at the last minute. Enjoy! I just love this recipe.

salmon is brain food - and kids like this recipe! The vinegar and lemon give the fish a very nice, slight flavor

Provided by carrie sheridan

Categories     One Dish Meal

Time 50m

Yield 4 serving(s)

Number Of Ingredients 11

4 salmon steaks, about 1-1/2 inches thick
2 cups water, approximately
2 teaspoons salt
1/4 cup apple cider vinegar
1 tablespoon chopped fresh dill (or dried)
3 scallions, chopped
1 lemon, juice of
1/3 cup peanut oil
1 teaspoon sugar
10 ounces frozen spinach, cooked and drained
3 cups cooked asian sticky rice

Steps:

  • Place salmon steaks in a large skillet with water, salt and vinegar [the water should come 1/2 up the side of the salmon].
  • Turn on heat and keep just under a boil for 10 minutes.
  • Turn steaks and cook, simmering, for another 10 minutes.
  • Remove steaks and take off skin and remove bones on the inside.
  • Add dill, chopped scallions, lemon juice and peanut oil to water.
  • Cook on medium heat until reduced to a sauce - 5-10 minutes.
  • Place salmon steak on plate.
  • Mold cooked rice in a 1/2 cup measuring cup and unmold on plate.
  • Top rice with spinach.
  • Pour sauce over spinach.
  • And serve.

Tips:

  • Choose the right salmon: Look for wild-caught salmon if possible, as it is generally considered to be higher quality and more sustainable. If you are using frozen salmon, thaw it completely before cooking.
  • Use a large enough pan: The salmon should be able to fit in the pan without being crowded. If the salmon is too crowded, it will not cook evenly.
  • Season the salmon: Before cooking, season the salmon with salt, pepper, and any other desired spices or herbs. This will help to flavor the fish.
  • Bring the poaching liquid to a simmer before adding the salmon: This will help to prevent the salmon from overcooking.
  • Cook the salmon until it is opaque and flakes easily with a fork: The cooking time will vary depending on the thickness of the salmon fillets. Generally, it will take about 8-10 minutes per inch of thickness.
  • Remove the salmon from the poaching liquid and let it rest before serving: This will help to prevent the salmon from overcooking.

Conclusion:

Poaching salmon is a simple and healthy way to cook this delicious fish. By following these tips, you can easily poach salmon that is tender, flaky, and flavorful. Serve poached salmon with your favorite sides, such as roasted vegetables, rice, or mashed potatoes.
