Time 40m

Number Of Ingredients 15

2 1/4 teaspoons active dry yeast (9g)
1 tablespoon sugar
1 1/2 cups warm water (100-115 degrees F)
2 tablespoons extra virgin olive oil
3-3 1/2 cups bread or all-purpose flour (divided)
1 teaspoon salt
2 teaspoons garlic powder
1 tablespoon Tuscan-Style Seasoning Blend (from The Simple Kitchen, or Italian seasoning)
1 cup freshly shredded Parmesan cheese
4 tablespoons unsalted butter (melted)
1 cup marinara or pizza sauce
2 cups freshly shredded mozzarella cheese
40 slices pepperoni
1/2 teaspoon dried parsley
1/4 teaspoon salt

Steps:

  • In a stand mixer fitted with a dough hook, combine yeast, sugar, and warm water. Stir to dissolve the yeast. Let rest until mixture becomes foamy, about 3 minutes.
  • Add the oil, 3 cups of flour, salt, garlic powder, seasoning and Parmesan cheese to the bowl. Mix on medium speed until dough comes together in one ball, and then knead for another 3 minutes on medium speed. The dough should be just a little sticky.
  • Add the remaining flour, 1 tablespoon at a time, as needed. The sticky dough is important to help the crust get a little lift as it cooks!
  • Lightly flour your countertop. Place the ball of dough on the counter, cover with a clean dish towel and let rest 5 minutes.
  • Preheat oven to 350 degrees F and brush a baking sheet with some of the melted better. Reserve remaining butter.
  • Roll the dough out to a 12x18" rectangle. Spread 1/2-1 cup of marinara sauce, leaving a 1" border around the edge. Sprinkle the cheese over the sauce and cover with pepperoni.
  • Starting at the long edge, tightly roll up the dough, pinching the pepperoni slices into the roll if they try to escape as you go. Use the last 1" of clean dough to pinch and seal the dough. Cut evenly into 12 slices.
  • Arrange the pinwheels cut side up on the baking sheet and spread them out so they aren't touching. Bake for 20 minutes or until golden brown and cooked through.
  • Meanwhile, stir together the remaining butter, parsley and salt in a small bowl. Brush the tops and sides of the baked pinwheels with butter mixture and serve with additional marinara or Alfredo sauce, if desired.

PIZZA PINWHEELS

PIZZA PINWHEELS image

Pizza Pinwheels are made from a soft, homemade dough with delicious toppings inside and melted cheese on top, they are an amazing weeknight meal or favorite appetizer!

Categories     Appetizer

Time 1h

Number Of Ingredients 9

1 cup warm water
1 TBSP yeast
1 TBSP sugar
1 TBSP oil
1 tsp salt
2 1/2- 3 cups flour
1 1/2 cups pizza sauce (or traditional marinara sauce)
2 1/2 cups shredded mozzarella cheese
2 cups total pizza toppings- mini pepperoni (diced ham, sliced olives, and pineapple tidbits, etc.)

Steps:

  • Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up.
  • Add in oil, salt and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!) Continue mixing for an additional 3-4 minutes.
  • Cover with plastic wrap and let sit in a warm place for 15 minutes. In cold weather, I like to turn my oven on for about 3 or 4 minutes, then turn it off and let my dough rest in the oven.
  • Preheat oven to 400 degrees F. Spray counter top with non-stick cooking spray and roll dough out into a large rectangle about 1/4" thick.
  • Top with pizza sauce and spread to coat dough. Sprinkle with 1 cup of cheese. Add pizza toppings- I did a section of dough for pepperoni pinwheels, another section with just cheese and a third with ham and pineapple. Top with another 1 cup of cheese.
  • Starting with one of the long sides of the rectangle, roll dough up tightly, pinching the seams to close at the end. Use a sharp, thin knife to cut 1 1/2" sections of dough from the large roll. This will result in about 15 pinwheels.
  • Set pinwheels on a large greased baking sheet. Bake for 12-14 minutes. Remove from oven and top with remaining 1/2 cup mozzarella cheese. Return to oven for an additional 1-2 minutes, until cheese is melted and rolls are just beginning to turn golden brown.
  • Serve hot with warmed pizza sauce to dip on the side.

Time 40m

Number Of Ingredients 9

1 13 oz. pkg. refrigerated pizza dough
OR 1 Recipe Homemade Pizza Dough (prepared through step 4*)
2 cups marinara sauce
1/2 tsp EACH (onion powder, dried basil, dried parsley)
1/4 tsp EACH dried oregano (garlic powder, salt, pepper, crushed red pepper)
1 cup freshly grated mozzarella cheese
1/3 cup freshly grated Parmesan cheese
32 pepperonis
1/2 cup finely chopped green peppers ((or combo of your fav chopped toppings))

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Set aside.
  • Roll out a long piece of parchment paper and lightly flour it . Roll dough into a 12x16 inch rectangle on floured parchment.
  • Whisk together all of the Pizza Sauce ingredients. Evenly spread 3/4 cup Pizza Sauce over dough, leaving a 1" border on the top long edge (the side you will roll towards so it can seal - see recipe post photos).
  • Microwave pepperoni on a paper towel lined plate for 20 seconds then dab off any excess grease. Evenly top sauce with mozzarella, pepperoni, green bell peppers and Parmesan.
  • Starting from the long side closest towards you, tightly roll up the dough, pinching in any escaping ingredients and seal up seam. Don't worry about it looking too pretty! Using a serrated knife, cut off the ends of the roll (if they are uneven) then slice roll into 12 equal pieces. I find the easiest way to do this is to slice the roll in half, then in half again so you have 4 equal pieces. Slice each of these pieces into 3 pinwheels.
  • Place each pinwheel, cut side up, on prepared baking sheet. Bake at 375 degrees F for 25-30 minutes or until dough is golden. Remove from oven and let cool for 5 minutes before removing pinwheels from pan to a wire rack. The Pizza Pinwheels will be a little soft at first but will firm up as they cool. Garnish with fresh parsley and serve with remaining warmed pizza sauce if desired.
  • To Freeze: Allow BAKED Pizza Pinwheels to cool to room temperature. Store in a large sealable plastic bag. When ready to eat, thaw, then bake at 350 degrees F for 10 minutes or until warmed through.
