3 tablespoons sugar
1 egg
1 cup flour
1 teaspoon baking powder
2 (8 ounce) cans unsweetened crushed canned pineapple, drained well
1 tablespoon butter, melted
1 cup sugar
2 eggs
2 cups flaked coconut

  • Set oven to 325 degrees.

½ cup shortening
1 cup packed brown sugar
2 eggs
1 (8 ounce) can crushed pineapple
½ teaspoon rum
¾ cup all-purpose flour
¾ teaspoon baking powder
½ teaspoon salt
¾ cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 9 inch square baking pan.

1 (14 ounce) can crushed pineapple
1 egg
3/4 cup brown sugar
3/4 cup shredded sweetened coconut
1/2 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Place pineapple in a strainer over a bowl.
  • Reserve juice for another use.

1 egg
1 cup all-purpose flour
1 teaspoon baking powder
2 cans (8 ounces each) unsweetened crushed pineapple, drained
TOPPING:
1 tablespoon butter, melted
1 cup sugar
2 eggs
2 cups sweetened shredded coconut

Steps:

  • In a large bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9-in. square baking dish coated with cooking spray.
