Time 45m

Number Of Ingredients 4

3 sweet potatoes
1/2 c crushed pineapple with juice
1/4 c light brown sugar packed
3 Tbsp butter

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish
  • 2. In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.
  • 3. Mix sweet potatoes, crushed pineapple, light brown sugar, and butter in prepared baking dish.
  • 4. Bake for 45 minutes, or until casserole is mushy with no excess water in the dish.

Tips:

  • Use fresh pineapple. Fresh pineapple has a brighter flavor and more nutrients than canned pineapple. If you're using canned pineapple, be sure to drain it well and rinse it off before using.
  • Don't overcook the casserole. The casserole is done when the pineapple is heated through and the marshmallows are golden brown. Overcooking will make the pineapple tough and the marshmallows rubbery.
  • Serve the casserole warm or at room temperature. The casserole can be served immediately after it's baked, or it can be cooled and served later. It's also delicious served cold.
  • Garnish with fresh mint or whipped cream. A garnish of fresh mint or whipped cream will add a touch of elegance to the casserole.

Conclusion:

Pineapple casserole is a classic Southern dish that's perfect for any occasion. It's easy to make, delicious, and always a crowd-pleaser. Whether you're serving it for a holiday dinner or a casual get-together, pineapple casserole is sure to be a hit.
